- 100 g green curry paste, try my Thai Green Curry Paste
- 800 g coconut milk
- 450 g bamboo shoots, canned
- 950 g chicken thigh fillet, cut into 2cm pieces
- 12 Kaffir lime leaves
- 2 tablespoons Fish sauce (to taste)
- 2 tablespoons lime juice
- 2 teaspoons finely grated lime zest
- 100 g frozen peas
- 100-200 g broccoli florets
- 1 bunch fresh coriander or basil leaves

Recipe's preparation
Place curry paste and 120ml of the coconut milk into mixing bowl and cook for 2 min/Varoma temperature/speed 1. Leave measuring cup off.
Add remaining coconut milk, bamboo shoots and kaffir lime leaves and cook for 8 min/100ºC/Reverse/speed soft.
Insert Butterfly.
Add chicken and continue to cook for 6 min/100ºC/Reverse/speed soft.
Add fish sauce, lime juice, lime zest, peas and broccoli, coriander/basil leaves and cook for 6 min/Varoma temperature/Reverse/speed soft.
Serve with jasmine rice and garnish with fresh coriander and sliced red chillies.

Made this only did half mix as we weren't very hungry due to having late lunch there was plenty to feed 2 adults and a teenage boy with another serve for leftovers. Did use jar brought curry paste, only complaint from fussy husband is it could've had bit more curry as I only put half amount in, but he wants it again. Absolutely delicious

I use probably 8 Kaffir lime leaves and halve the shop bought green curry paste as it was initially too spicy. I also use coconut cream instead (400mL) and then add in around 200g water. Just our preference

Made your paste first and
Made your paste first and then made the curry. Only had about 600g of chicken breast and used one zuccini and the florets of two bunches of broccolini, no peas. The rest I did as recipe. So beautiful. A bit of sauce, but that's because I tried to use up what I had. Who cares? The rice soaks up the sauce and so great. MIght add a bit more chilli to the paste next time but not really necessary because it's so tasty. Thanks so much for this recipe.

I love this recipe! Easy and very authentic tasting - just like the Thai Restaurant - just better. The paste makes about enought for 5 times use and I love that I can freeze it until needed. The paste is a must have in very kitchen.

I made this last night.
I made this last night. Really bulked up the vegetable, added red capsicum, green beans and carrots. I also used light cocunut milk to try to make it a little healthier. Was still nice but I think the full fat stuff would of been better.

wow delicious. Made it tonight using your curry paste recipe, used zucchini instead of broccoli and chicken breast instead of thigh (only cos that's what I had in the fridge). I added about a tablespoon more paste as I didn't have any fresh coriander and I find the flavour of this paste mild - even though I made it with the chillies and seeds. Very tasty, thank you!

We absolutely love this recipe, have cooked twice now and also made and froze curry paste first time round. It's a family fave in our house thanks for sharing such a great recipe. Also I substituted the thigh fillet for breast

We had some leftover cooked Thai chicken sausages and I did not want to waste them but also did not want to put them back on the BBQ so this was my solution!
I followed the recipe until the add the chicken thigh fillet part and just substituted with my already cooked chicken sausages,
The flavour is really good and we can now have a new meal this week without anyone complaining they are having "this again"

First successful green curry
First successful green curry I've ever managed and first "main meal" I've ever cooked in the Thermie! Thank you very much for the great recipe. I accidentally added slightly more curry paste (mixed through some cream for the kids) and couldn't find kaffir anywhere but it was still delicious! Will definitely be a favourite

Great recipe, very tasy and quick. I added half a chopped up sweet potato and I didnt bother using the butterfly turned out fine. Will definitely make this again. Even Mr fussy (13 year old) liked this.
