Cheesy Bacon mini muffins

Ingredients

24 portion(s)

  • 200 grams of tasty cheese
  • 1/2 brown onion
  • 200gm bacon
  • 1 tsp EDC stock
  • 20 gm olive oil
  • 2 eggs
  • 250 ml milk
  • 350 gm SR flour

Recipe's preparation

    Cheesy Bacon mini muffins
  1.  

    Chop 200gm tasty cheese into chunks and grate sp6 for 10 seconds. Set aside.

    Chop 1/2 a brown opinion on sp4 for 2-3 seconds, add in 200gm bacon and chop 10 seconds sp4. Add 20gm olive oil and 1tsp EDC stock. Cook at varoma for 3 mins sp1

    ...

    Add 250gm milk and 2 eggs mix sp4 5 seconds. Add cheese & 350gm SR flour and mix sp5 for 10 seconds or until just combined.

    Spoon mixture into a mini muffin pan sprayed with non stick baking oil.

    Cook for 20 mins on 180'c or until golden.

Tip

Try adding grated zuchinni or 100gm parm cheese & 100gm tasty as a variety xx

    I made these on the a tray rather than a muffin tin, they were delicious , used left over ham and gluten free flour also added an extra egg as gluten free flour tends to make things dry very good.

    I whipped these up when it was almost lunch time, and I realised my bread was off and my daughter was napping. I added some zucchini and they were a hit with my 13 month old and her little friend. I'll be making these again.

    Lovely!!! My mix was very dry - was a bit confused as to whether it was 250ML or 250GM of milk.... I just added more until it looked as it should.

    Oh my gosh these are brilliant!!!!! Thankyou! I thought they would need butter on them, not at all as they are so cheesy. 5 star rating!

    I also up'd the milk to 200mls as it looked a little dry. I used a mixture of colby, cracker barrel and parmesan because that's what I had.
