Chicken bone broth/Stock

Ingredients

Collect:

  • 1 Leftover cooked Chicken carcass, (approx 500g bones, skin etc)
  • 1 carrot, roguhly chopped
  • 1 stalk Celery, roughly chopped
  • 1 brown onion, skin on and quartered
  • 1 clove garlic, skin on, smashed with back of a knife
  • 1 tbsp White or apple cider Vinegar
  • 20 grams rock salt
  • 5 grams cracked pepper, (Optional)
  • herbs, any (Rosemary, bay and thyme are good) small handful fresh or 1 TBSP dry (optional)
  • cold water

Recipe's preparation

    This is the classic chicken bone broth used as a base for soups and gravies etc. It’s not only PACKED with flavour, its also full of with immune system support vitamins and minerals. This recipe will make a somewhat concentrated stock, more like a consume/Jelly.
  1. Place bones in TM, smash on speed 6 for 4 – 6 sec (you want them roughly broken up not mashed)

     

    Add all other ingredients, with water last - to fill max level.

     

    Varoma/10min/Speed 1/Counter-clockwise operation

     

    90°c/30min/Speed 1/Counter-clockwise operation

     

    Place TM strainer into the container you want to store the stock in and strain

     

    Allow cool and refrigerate (you can scrape off the fat off the top before using if desired).

Tip

The vinegar helps leach the calcium out of the bones and into your broth

Herbs and amounts are optional, I just throw in a bit of whatever I have

You can also use other veggies, if I have broccoli stems or cabbage getting old I thrown them in for example.

Will last in the fridge about a week, or freeze for 9 months

    JC-Thermie: appologies for such a late reply, I have been away a long time. Yes varoma 10 min followed by 90° for 30 min. This broth is it's own recipe not an ingredient in another recipe, so I have no idea what ratios you would want to dilute the liquid stock with in your cooking, it would depend on how strong you want the flavour. thats the best thing about home mage though, you can completely adjust to your own tastes! You can have it completley undiluted (thats how I use it in soups and gravies etc), or dilute to your tastes.

    Is it Varoma/10min/Speed 1/ AND THEN 90°c/30min/Speed 1/" ?

    Also, what is the ratio of this broth (e.g. how many grams of broth should i dissolve per cup of water? And where a recipe says 1 tbsp of tm stock, how many grams would be the equivalent for this broth?

    I want to use it in soups, risottos etc but don't know the ratios.

    Can someone please kindly clarify?

    on a TM 5 Varoma is the highest heat setting. So varoma/10 mins/speed 1 means. You need to use the highest heat setting, for 10 minutes on speed 1.

    Thanks for posting. It's good and easy. If you're making it for soup, I recommend reducing the salt to about 5g. Because as stock, it's not concentrated enough to cut with water but too salty to use as is.

    Amazing Flavour!
    I can’t believe you can get this much flavour into a stock/bone broth in such a short time. I drank a cup as soon as it was ready. Unfortunately more salt poured out of the pack than was supposed to (when I was measuring it into the Thermomix at the start) so even though this batch was too salty, it was absolutely delicious and so warming on this cold morning.
    I will be definitely making this again. Thanks for a great recipe.

    Making this broth almost every Sunday. Love it and recommended to my Thermie friends. I am a bit concerned blitzing the bones so I only blitz the carcass and add the bones later. The broth is very flavoursome and so easy to make, used to make it in slow cooker but this is far better. Thanks!

    Tried this for the first time last week. Flavour was awesome but way too salty. I realise now reading the comments that it's a concentrate. Does anyone have a ratio broth/water they use for turning this into something like a chicken noodle soup?

    Hubby loved it all the same. Easiest 5 star I've ever given. We made chicken noodle soup with egg noodles, chicken breast and sweet soy drizzled over the top!

    I've done bone broth the slow way before, overnight in the slow cooker, and was reluctant to do it again as it makes the whole house smell!  This recipe was so easy and quick in comparison, I love that all the bones and veggies get chopped too.  Now I've made this twice in two weeks and my kids (5 and 3) are loving it.

    Creates a sensational Paleo bone broth. I cut back on the salt substantially though (I only add a pinch). 

    We roast a chicken nearly every Sunday, and so I make the bone broth with the carcass. Then you have wonderful broth in the fridge all week.

    I was a bit dubious regarding the bones lol but this has made the yummiest broth I've ever tasted! 

    After draining bones and veggies, I did put it back in thermomix bowl and blitzed it for 20 seconds just to make sure there were no bones lol!

    I need to have this for gut healing.. I think you may have just changed my world!  Love

    I really enjoyed this - thank you for sharing an easy, quick chicken broth. I made this up tonight for my sick daughter. I'm wondering if anyone else found this particularly salty?  Is the salt factor for preservation as well as flavour? Maybe next time I might use a little less

When I make this stock it comes out clear, I think judging by the comments of it tasting great but looking horrible, it's possible the bones are being chopped too much in step 1. I have the following 2 suggestions if you would like a clear stock - 1. Strain it through a muslin cloth, or 2. don't crush the bones either as much or at all (It will still taste great, but won't have as many imune strenthening vitamins and minerals). Hope that helps tmrc_emoticons.)

    I had my doubts as it looks pretty disgusting when it's cooking but the flavour is just amazing!!! I made an Asian inspired soup with some of the stock and froze the left overs in cubes for use later. I also used the left over as suggested to make dog food-no onion added-what a great way to use what would normally be just thrown out-a definite keeper!!!
