Butterfly Pasta with Salmon Sauce

Ingredients

  • 900 g water
  • 500 g butterfly pasta
  • 180 g canned salmon, in brine
  • 1 onion, cut into halves
  • fresh parsley, handful, plus extra to serve
  • 80 g Butter, (see Tips)
  • 50 g Smoked Salmon, shredded
  • salt, to taste
  • pepper, to taste
  • 200 g thickened cream
  • lemon juice, (optional), to taste

Recipe's preparation

  1. Place water into mixing bowl and cook 14 min/100°C/speed 1.

  2. Add pasta and cook 8 min/100°C/Counter-clockwise operation/speed Gentle stir settinguntil pasta is cooked, prolonging time by 2 minutes if necessary.

  3. Drain water through simmering basket and set pasta aside in thermal serving bowl or other large bowl, cover to keep warm.

  4. Place onion and parsley into mixing bowl and chop 4 sec/speed 7.

  5. Add butter and sauté 2 min/100°C/speed 1.

  6. Add salmon, salt and pepper and cook 3 min/100°C/speed 2.

  7. Add cream and mix 10 sec/speed 3.

  8. Combine with cooked pasta and sprinkle with extra parsley and lemon juice (optional) to serve.

Tip

Butter can be replaced with olive oil.

    I read the comments first so I switched the pasta to casarecce instead as it's more sturdy and I cooked fresh salmon for the same time as the pasta in the varoma. Then made the sauce (with corn) and used smoked salmon as a garnish. Well worth it as the kids both ate it. Yay!

    Made this tonight for my family of 4 with smiles all round. 

    Next time I would halve the pasta as 500gms was just too muh (the dogs will love it though).

    Will be one of our favourite recipes.

    Quick and easy, my family loved it.  Added some frozen baby vegetables and cooked it with pasta.  I think it is best to stir smoked salmon right befor serving this dish.  Thank you, will be cooking it again.

  • My butterfly pasta turned

    My butterfly pasta turned into mush so I then had to cook rigatoni on the stove. I put some smoked salmon in with the tinned salmon and saved some for throwing on top of the pasta (i think its better that way). Otherwise a great way to get kids to eat salmon pasta
