Easy Thai Green Curry

Ingredients

4 portion(s)

  • 50 g Cashew nut or nut of choice
  • 3 spring onions
  • 3 green chilli, de seeded (or not!!)
  • 2 clovesof garlic
  • 1 lemon grass stem, (cut in 4 ish)
  • Kaffir Lime leaves
  • 20 g olive oil
  • 440 gTin Coconut Milk
  • Sweet basil
  • 2-3 tbsp Fish Sauce
  • 1 tbsp sugar
  • 2 chicken breasts, sliced
  • Veg of Choice (Capsicum, Beans)
  • Coriander to garnish

Recipe's preparation

  1. -       Place nuts in bowl and mill for 5 seconds Speed 9, Set aside

    -       Chop Spring onions, Chilli, Garlic, Lemon grass, Kaffir lime leaves Speed 7, 10 seconds

    -       Add Oil and sauté 3mins,100 degrees speed soft

    -       Add Coconut Milk, Cook 4 mins 100 degrees speed 1

    -     Blend 20 sec, Speed 9 for a smoother sauce.

    -       Add Chicken & Vegetables, Cook 6-8 mins (dep size of pieces),100 Degrees, reverse, speed soft

    -       Add Fish sauce, Basil, Sugar and ground nuts (less if want a thin sauce)

    -       Cook 2 mins, 100 degrees reverse speed soft. Garnish with Coriander.

     

    Serve with Steamed Rice

    Its a personal taste thing really but with the Lime leaves I always use at least 2 pairs (leaves are double on the stem if fresh from garden) depending on size....basil, I am usually out of so hardly ever add in but when I do its a small handfull!!

    Sorry I am very much a chucker, and even when I follow a recipe I forget to follow it!!!

    Thanks, its a staple in our house....kids are making it for Mothers day dinner this evening!

    I have been meaning to add in a blend step which I will do now (after adding coconut milk blend for 20 secs speed 9) this gives a smoother sauce.

    I also always book my rice first and leave in the Thermoserver to continue cooking and fluff up!

    I'm still getting used to the Thermomix, and looking forward to being able to convert my own favourite recipes. I tried this Thai Green Curry last night, it was fantastic and very authentic. I cooked the chicken for slightly too long, but that's a matter of me getting used to the speed and efficiency of the Thermomix.
