Recipe's preparation
Preheat oven to 180 degrees.
Place Carrots and Bananas into the TM bowl and chop for 10 seconds speed 7.
Add all other ingredients into TM bowl and mix for 40 seconds in Reverse speed 4.
Spoon into muffin pattys (I prefer mini) and bake in pre- heated oven for 20 mins or until golden brown.

half olive oil and subbed sultanas with dates. Very sweet probably due to the dates
so next time I will cut the sugar down to about 50G

I made these tonight as a treat for school tomorrow. I used GF flour, halved the sugar and added in 40g of cocoa and subbed the sultanas for dates. Trialled fresh from the oven and the passed the taste test!

Delcious I only used 65g brown sugar and is still lovely and sweet. Also subbed 1/2 macadamia and 1/2 coconut oil for the veg oil. Next time I will try some wholemeal flour too.

I used a teaspoon of honey
I used a teaspoon of honey instead of sugar and only used 100g of macadamia oil. Made 12 large muffins. Taste great!

I made a few changes but these were delicious and my fussy 2y/o also enjoyed them.
i used coconut oil, I used only 20g brown sugar and 40g coconut sugar (I found it still very sweet so would reduce this again next time).
i also substituted saltanas for blueberries I had previously frozen.

These muffins are so yummy, my 2.5 year old and myself made these today. We had no self raising flour so made it with plain flour and baking powder and used less brown sugar. Will be making these again!!!

Sooooo delicious. I made these 3 days ago and still taste fresh and moist. I used 100g coconut oil and 60g veg oil, and half brown sugar half coconut sugar. Made 24 mini muffins and 5 normal size currently testing out how well they freeze cos theyde b great to pull out for toddler lunchbox snacks.

Delicious fresh & the kids enjoyed 3-4 mini muffins each for morning tea. Second time I've made these! Substituted 100g liquid coconut oil for the 160g veggie oil & used dried apricots & cranberries this time in place of sultanas in recipe. Made 24 heaped mini muffins (12 mins in oven) & 4 standard muffins (18 min in oven) in one batch the first time; 12 heaped standard muffins & 8 heaped mini muffins the second time @ 160 deg C FF. Added 1 tbs of chia seeds as suggested & 60g of brown sugar (instead of 85g), would add less than that next time as the fruit & carrots already make it quite sweet. Thanks for sharing

Love these muffins! I exchange the flour for gluten free, put in 100g coconut oil instead of vegetable oil, and use dates instead of the brown sugar. They still turn out soooo moist and delicious. This is a favourite in our house! Thanks
