Ingredients
140 g rapadura sugar or raw sugarzest of one navel orange
50 g dark 70% cocoa chocolate
flesh from orange (remove pith)
40 g raw cacao powder (or cocoa powder)
1 large egg white (or 2 small egg whites)
ice cubes (fill to the 2L mark)
Preparation
1.
Grind Rapadura in dry bowl on speed 9 for 30 seconds, until fine.
Add orange zest and grind on speed 9 for 10 seconds, or until finely ground.
Add chocolate (broken into squares) and grind on speed 9 for 15 seconds.

Remove mixture to a bowl. (The mixture will become quite sticky and gooey - you need to scrape it into a bowl with the spatula and put the other ingredients in, then add it back on top, otherwise it freezes to the bottom of the bowl once the ice hits it.)
Add the remaining ingredients to the bowl, then top with chocolate mixture. Grind on speed 9 for 1 to 2 minutes, until creamy, using the spatula to help push the ice into the blades.
Top with grated chocolate if you like, and eat it quickly before it melts! (Or freeze for later.)
Tip
This is very 'chocolatey' - if you want a milder chocolate flavour, use less cacao powder.

Lovely! We used one frozen banana, instead of the egg white. It was not too strong and very refreshing. Love it!

This was yum. I made a half
This was yum. I made a half batch using about 370g ice. I added the orange flesh with the ice etc, so the sugar/choc mix was powdery and easy to take out of the bowl. One other thing to remember is the cookbook recomends that you add the ice for a full batch a sorbet in 2 steps. I.e. add half the ice, crush it then add the other half. Thanks for a yummy recipe.

Sorry, just saw your comment - how did the coconut milk go? I use frozen coconut cream or frozen banana instead of egg white for people who can't have egg, and it works great! Lovely and creamy

Sorry, just saw your comment! Did you grind the rapadura up really well first in a dry bowl? That could be why it was gritty... Or if you don't take the chocolate out and put it on top of everything else it won't mix in well - could it have been that? Was a while ago - maybe you've perfected it by now!!

I made this the other week
I made this the other week from your web site, but found the texture a little gritty, even though i blended the choc to a sticky gooey paste. I used lidnt 70% choc and cocoa powder. Any suggestions where I might have gone wrong? I'm fairly new to TM cooking, so still in the experiment stage. It might be time to give it another go. TY.

I'm going to try this tonight and instead of the egg white I'm going to add a little coconut milk - My son is allergic to dairy, soy and eggs but thought it might make it a little bit creamy.... We'll soon see

Someone told me they added a bit of Contreau to it, and thought that was pretty good - I guess if you add too much it would be pretty slushy, though!
