Pineapple and Coconut ( Varoma) Fried Rice

Ingredients

  • 400 grams mixed chopped vegies, (i use 300gms frozen and add some chinese cabbage and snow peas)
  • 100 gms of freshly chopped pineapple
  • 200 grams bacon, sliced, preferably free range organic
  • 400 g rice, white or brown
  • 4-5 eggs, beaten

sauce

  • 150 grams Pineapple fresh, chopped in chunks
  • 400 grams coconut milk, 1 tin
  • 200 grams water
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon curry powder

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Place rice basket into Thermomix bowl, and weigh in:

     400g of raw rice (or less if you want a smaller batch).Use brown or white rice Remove basket and rinse rice,

    Add to TM bowl..- 1 tin of coconut milk- 150gms fresh pineapple.

    -2 tablespoons soy sauce,

    -1 tablespoon fish sauce

    -1 teaspoon curry powder3. Mix on speed 9 for 20 seconds

    Then add -200gms water (for white or basmati rice) / 400g water (for brown rice)

    Add Rice Basket with Rice back to TM Bowl

     Fasten lid onto bowl, place Varoma on top,

    5.  Place the chopped Bacon in Varoma dish.

         On top of Bacon place vegies.

    Wet some baking paper and place on Varoma tray, pour beaten eggs (seasoned with S&P) on to baking paper and place on top of Varoma Dish.

     

     Make sure you can put the tray and lid on the top so it closes properly.

    IF USING WHITE RICE

    Set TM to cook for 10 mins on Varoma heat on speed 4

    6. Check egg and see if Omelete is cooked (dont over cook or it wil go rubbery. 

    if cooked, take tray out and replace varoma lid to continue cooking rice and vegies, give the vegies and rice a stir at this stage.

    Continue cooking for another 10 mins on Varoma temp speed 4 (or until rice and vegies are cooked. Depending on what vegies you use you may need to take vegies out before the rice,

    IF USING BROWN RICE (cook for 35mins)

    Add the meat and veggies and egg in the last 20 mins of cooking

    7. Remove Varoma and rice basket, place Varoma lid underneath Varoma bowl, and stir the rice into the meat and veges. Slice the egg up in tray and tip into Varoma bowl with rice. Season with some homemade sweet chilli sauce and serve! Easy!

     TIP the sauce down the bottom thickens and can be poured over the rice ( i like a dry fried rice though) or save it and use it for a yummy sauce over BBQ chicken or a dipping sauce for kebabs

    I LOVE this recipe...it's one of our favourites. I leave out the fish sauce and use less rice. The flavours are awesome!

  • I was looking for an easy

    I was looking for an easy all-in-one Varoma meal but unfortunately I found this recipe difficult to follow, quite complicated to do, and it took way too long. None of the separate parts came together on time, so the veg ended up being overcooked and the rice took almost double the time stated.

    i found the sauce way too salty to use at the end too.

    overall the flavours were nice but I probably wouldn't bother with this one again personally.

    Great recipe, it proved to be a big winner in my house of fussy boys! I used basmati rice and had to cook it about 10 mins longer to cook it through, the eggs also needed this extra time too.

    I made this tonight and the flavours were great.  I used brown rice however and needed to cook the rice a lot longer than the recommended 35 minutes. It probably took closer to 50 minutes and I needed to add extra liquid.  But nonetheless it was very tasty. 

    I also added some fish fillets with the vegies instead of bacon and it was lovely and served the fish on top of the rice and vegies.

    Yummo!!! This is a very good recipe!! i only added some green chili and little garlic for extra kick to the sauce and was really a great and easy dish! Thank u! Will b a regular in my house!

    ( not sure if it's been pointed out but the instructions r missing the point when u put the basket with rice into the bowl... just thought if any newbie will try this recipe they might get puzzled a little bit on that  technicality missing tmrc_emoticons.;-) just thought will mention it....?

    This is yummy, like most Thermie cooks, changed a few things to suit family tastes, omitted the fish oil and curry powder, started by 'blitzing' 2 cloves garlic, used 1 teaspoon Sweet chilly sauce and 1 tablespoon Oyster sauce along with the Soy sauce, and omitted the pineapple, as not liked by all, the end result was a hit with all the family.  Having guests tomorrow night and its on the menu. tmrc_emoticons.) tmrc_emoticons.) tmrc_emoticons.)

  • Delicious! I also steamed

    Delicious! I also steamed salmon fillets on the veggies and used fresh veggies. However it seems the eggs have to be pretty soft when removed as if cooked properly once they cool down they're rubbery. Tricky. I also pour 3/4 of the sauce over the digs for more flavor and use 1/2 the amount of fish sauce noting how salty it is. I've been meaning to serve it in a scooped out 1/2 pineapple but haven't yet. Made it a few times. A real winner!

    I had trouble making to rice cook too and when I looked at the amount of liquid left jat the end of cook there was hardly any so I added another 200g and cooked for another 10 minutes after emptying the rice into the actual TM bowl... not the basket... Its kind of risotto ish now but still yummy.

    I made this last night but I didnt use the pinapple or any meat its was vegetarian with my vegies 3/4 cup of peas and 3/4 cup of corn, 3-3 spring onions finely chopped and 1-2 carrots chopped on speed 4. I added extra soy 5 tablespoons, 2-3 tablespoons of oyster, 2-3 tablespoons fish sauce and the curry powder with coconut cream.

     

    At the end I added extra soy and a drizzle of sesame oil when i mixed the rice with the vegies tmrc_emoticons.) Delish tmrc_emoticons.)

    I made this tonight....my first meal using varoma. I made it as per instructions but left the rice in and cooked it for an extra five minutes until it was cooked more and it all turned out beautifully. My egg took the full 20 minutes to cook but realized at half way point that I had not left any vents free around the bacon and veges to allow steam up to cook egg.  This fried rice was VERY tasty with some of the sauce stirred through! Yum yum!!

    Sorry, this is a recipe i make up as i go along really tmrc_emoticons.8) but i have adjusted it to make it better for everyone. i have cut down on the amount of pineapple and up'd the speed to juice it on (yes i use fresh pineapple pieces)

    Sometimes the Rice looks very wet but once you stir it, it usually soaks up the juice and becomes dryer. Try cutting down the amount of liquid if it doesnt.

    if you find the rice isnt cooking properly swap the fresh pineapple to some pineapple juice so its more liquid or just use coconut milk. tmrc_emoticons.)

    I cooked this tonight and had trouble getting the rice to cook ...I think I miss interpreted the recipe ...when it says  300grams pineapple does it mean juice or the solid fruit....I put the fruit  in ...???  I tuned out like risotto ..the flavor is nice so I would like to know where I went wrong... tmrc_emoticons.(
