Nonna's Meatballs

Ingredients

4 portion(s)

Meatballs

  • 60 grams Romano or Parmesan cheese
  • 7 grams Parsely
  • 1 clove garlic
  • 60 grams water
  • 45 grams Gluten Free Bread Crumbs
  • 2 eggs
  • 250 grams Veal, Minced
  • 250 grams Pork, Minced

Sauce

  • 2 onions, Peeled and quartered
  • 3 cloves garlic, Peeled
  • 20 grams olive oil
  • 20 grams sugar
  • 50 grams tomato paste, Or one sachet (two tbs)
  • Salt and pepper, To taste
  • 2 x 400 gram Cans of chopped tomatoes
  • Basil and oregano leaves, Small handful

Recipe's preparation

    Meatballs
  1. Place Romano cheese cut into 1.5cm cubes, garlic, and parsley into TM bowl. Chop 10 sec/speed 9.

  2. Add meat, water, bread crumbs and eggs to TM bowl. Add salt and pepper to taste. Mix 10 sec/speed 4. 

     

  3. Scrape down sides and mix for a further 5 sec/speed 4. 

     

  4. Roll mince mixture into small balls, should make about 36 meatballs.

     

  5. Place meatballs into varoma tray you will need to use both the top and bottom trays. (No need to wash the bowl).

  6. Sauce
  7. Add peeled garlic, quartered onion and herbs to TM bowl and mix for 5 sec/speed 7  Scrape down the bowl. 

     

  8. Add 10 grams of olive oil.  Cook 3 min / Varoma / speed 1.

  9. If adding other vegetables to the sauce, do this now and mix for 5 sec/speed 7 (or as required for desired consistency) Scrape down the bowl. 

    Add the rest of the ingredients and mix for 5 sec / speed 5.

     

  10. Place Varoma containing meatballs on top and cook  18 min / Varoma / speed 2. 

     

  11. Serve over cooked spaghetti.

Tip

No need to wash TM bowl between meatballs and sauce.

    Best meatballs...Used lean beef mince, added grated carrot in meat mixture.
    Used vegie stock and nutmeg to spice meat.
    For the sauce mix, I omitted sugar, used a dash of wine, vegie stock mix, pepper and mixed herbs . Added mushrooms.
    I cooked them on the stove, browning meatballs first. Winner,winner !!!

    I have been making this recipie for years ! Yesterday I took out the ingredients only to find I had no eggs ! I substituted 8 tablespoons of greek yoghurt , cornflake crumbs and added a tablespoon of chipolte in abodo sauce to the sauce . OMG , this recipie is amazing anyway - but this little tweek was next level ! THANK YOU .....

    So very delicious ! this is half recipe with triple parsley, 300g pork mince only. Extra salt in the sauce and no sugar. Perfect for 2 . So, I added quarter teaspoon salt to the sauce and quarter cup pasta cooking water so the sauce wouldn't catch on the base. I highly recommend this recipe for a few reasons. It's versatile with which meat you use. I used oats successfully as I had no plain crumbs. It's ready in under 45 minutes and you could eat it with or without pasta. Thank you for a quick tasty Varoma dish

    This was really yummy. We added extra garlic and didn’t add the sugar. We added the meatballs to dinner rolls and made mini meatball subs was so delicious. So super easy to make my 6y/o made it for dinner for everyone.

    Loved making the meatballs this way but did find the sauce a little bland.. might add more tomato paste or some chilli next time, and more seasoning. I added a carrot and small zucchini to the sauce. Will put this recipe on the rotation.

    This is the second time I have made these. The first time I thought they were a bit bland, so this time I added a tablespoon of apricot jam, a tablespoon of fruit chutney, a quarter teaspoon of curry powder and an onion. They were superb. Best I have ever made. Thank you.

    My butcher doesn't do pork mince, so I did all beef. They were great.

    Lovely thank you! The family enjoyed this. I added a carrot and zucchini to the sauce with 1 onion. I cooked the meatballs in the oven, because that is what I am used to, but next time I will try cooking them in the Varoma tray. Next time, blitz the garlic first or mince it as there was still big chunks of garlic.

    Yum yum yum! These meatballs are amazing, so tasty. The sauce is delicious too without being too rich. I browned the meatballs in the frypan after steaming them in the varoma. Big thumbs up from our family including 3 fussy eaters!

    Oh my gosh!! Thank you thank you thank you!! My insanely fussy 6 year old and 13 year old loved this dish!! I also added the veges in the sauce, and omitted the sugar and used 5 star beef mince. They ate every last bit and both them and mummy smiled the whole time!! Love all in one dishes that cook at the same time and don't have to use any other kitchen utensils or cookware!! Will be a frequent dinner in our house maybe with Turkey mince next time. Thanks again!!

    This was great, and my two small and very fussy boys chowed it down.  I omitted the sugar and added a carrot and zucchini to the sauce.  I would have preferred to use fresh herbs but only had dried so used those and it was still nice.  We only use Ardmona brand tinned tomatoes everything tastes better with them.

    LOL! I've done that before too! Give the sauce a taste before serving too- if bland add a little more sugar and a bit of salt to see if that helps it. (Just do gradually so you don't over salt.  My Nonna used the Val Verde brand of tinned tomatoes.

    Thank you so much for your reply. I chose your recipe because of all the good comments. I only had Parmesan, but all other ingredients were fresh, good quality and as per the recipe. Thanks for the tip about the tinned tomatoes. I'll give it another go with the Romano cheese as you suggested and a different brand of tinned tomatoes and tell my husband it's a different recipe !! Ha ha

    Oh that's no good!! This is abnormal to the rest of my feedback. Did you use all the correct ingredients and were they good quality and fresh? I also find the quality of the tinned tomatoes can make a huge difference too.  The Romano cheese is very important too! Salt can help bring the flavour of the sauce out if all other ingredients are ok.

    Husband asked me not to make again! We found the meatballs didn't have much flavour, but loved steaming them. The sauce was a little bland for us too. I will have to keep looking for my spaghetti and meatballs recipe to add to my collection.
