Ingredients
- 1 I tin of organic chickpeas drained and rinsed or 250-300 g well cooked chickpeas
- 60-70 g of lemon juice (or less and top up with a little water)
- 1 garlic clove, peeled
- 2 peeled strips of lemon zest (no pith)
- 2 tbsp hulled organic tahini
- 1 tsp of agave or honey
- 2 Tbs extra virgin olive oil
- cracked pepper
- Celtic or Himalayan salt

Recipe's preparation
Place garlic and lemon zest in TM bowl and process of speed 8 for at least 10 secs or until the zest stops hitting the sides of the bowl. Scrape down and process again.
Add all ingredients except olive oil and blend on speed 4 for 1-2 mins.
Scape down sides and around the base of the blade, add olive oil, and blend another 2-3 mins.
Check seasoning and add more salt and pepper if needed.
Serve with dukkah, crackers, crudites, beetroot salad, any salad, on bread..........

Tip
If chickpeas are a bit firm they will not make a smooth hummus. If tinned chickpeas are firm, cook them down in the brine from the tin for another 10-15mins.

As a preface to this review, I want to say that...
As a preface to this review, I want to say that Iembarked on this culinary journey with an open mind as to whether this recipe could in fact be ‘THE BEST HUMMUS EVER’.
Unfortunately I have been truly misled. In hindsight, I should seen the red flags blaring on this seemingly innocent thermomix recipe post. They were obvious.
I will not take too much of your time so I will get on with the review.
1. Whilst some may think it is cute or original or inventive or kitche to add honey Willy nilly into any classic recipie you come across, this is ultimately disrespectful to the hundreds of years of history of this timeless dish. This was the first shakey footstep down a rickety staircase leading to god knows where.
2. The exclusive requirement of either celtic or Himalayan salt is not only pretentious, snobby and elitist but it hides a much more sinister undertone. It’s just not realistic that a Mediterranean working class staple such a hummus had either Celtic or Himalayan salt in it. To require these ingredients exculudes the culture and history that created the recipe in the first place. It smells of post-colonial garlic breath to me.
3. To call your own recipe the BEST EVER recipe is a bit audacious. Let the people speak for themselves.
4. Could have done with more garlic
I put my TRUST in this recipe - made a 3x batch of it. Never have been as dissatisfied with my 1.5 kg of hummus alone in my kitchen. I’m usually an introvert but this mediocre hummus has forced my hand and here we are - 5 paragraphs into a review of hummus on a thermomix forum. I hope you are happy, whoever you are.

Made this using black sesame seed tahini. Vote of approval from husband, 20 yo grandson (who fancies himself as a hommus connossieur!) 13 yo grandson wants it on toast for breakfast. I loved it. Yes, a total success. Thank you for this recipe. PS: looks a bit funny with the black sesame tahini but doesn't change the flavour.

I am a recent convert to hummus as I have only recently found one I liked (store bought), until now! This IS the best, creamiest, most delicious hummus I have ever eaten.
I did did change a little (due to laziness) I only had a small lemon so I microplaned the whole zest, squeezed the lemon (pips went in too), added a squeeze of garlic from the tube one I had in the fridge. No honey, agave or tahini added but I did put in a teaspoon of ground cumin.
I did did the cook down of the chickpeas which I would definitely do again.

Excellent cauli mash! Made this a second time and it's just as good. Managed to do 1.5 portions of recipe, it would not have been possible to do double portion, wouldn't have fit into the mixing bowl. In doing the 1.5 portions, I had to break the cauliflower into pretty small florets (such that 750g of it just about all fit into the mixing bowl), and initially cooked it on speed 2 instead of speed 1. I also paused the cooking halfway through (ie 10 minutes in) to stir the cooking cauliflower but it wasn't really necessary. Also note to go light with the pepper -- i added slightly too much! Could taste and see the black pepper in the final product

Made this to bring to a boat trip, everyone loved it and said it was REALLY REALLY good, and the recipe was asked for. I will be making this a staple in the household!
I used 50ml of lemon juice (from 1.5 lemon) and 10ml of water (or can be substituted with 50ml water plus 15ml white vinegar), doubled the garlic and skipped the agave/honey. Used about half teaspoon of salt. Used a microplane for the lemon zest (from half a lemon) as the zest is then really fine.
To make smoked hummus, add 1.5 heaped teaspoons of smoked paprika powder into the mix before the final blend with olive oil. I also blend at a higher speed (up to sp for longer for a smoother hummus
Refinement:
removing the skins of the chickpeas yielded a MUCH SMOOTHER hummus. Final yield would be less as you discard the skins. Adjustments: olive oil 1.75 Tbls instead of 2. Smoked paprika (if using) 1 tsp instead of 1.5

Just made this hummus and it was a big success! Added extra garlic and a tiny bit of hot pepper. With the lemon the hottness of the pepper was nicely balanced. Will definitely make it again!
