Chicken, Bacon and Leek Pie

Ingredients

8 portion(s)

The Pie

  • 1 clove garlic
  • 1 leek, large, white only, chopped
  • 1 onion, halved
  • 25 g olive oil
  • 500 g chicken breast, cubed
  • 100 g bacon, chopped
  • 1 tbsp Vegetable Stock - EDC
  • 100 g water
  • 140 g cream
  • 4 tbsp cornflour
  • 1 sheet Puff pastry
  • 1 sheet Shortcrust Pastry

Recipe's preparation

  1. 1. Place garlic, leek and onion in TM bowl. Chop for 4 seconds/speed 5.

    2. Add oil and saute at 100C/4 mins/speed 1

    3. Insert butterfly

    4. Add chicken, bacon, stock, water, cream and cornflour and cook 100C/20 mins/Counter-clockwise operation/speed 1. MC off and basket on top.

    5. Allow filling to cool completely before using in a pie otherwise the bottom of the pie will be soggy

    6. Heat oven to 190C, butter a pie dish and line with one sheet of shortcrust pastry.

    7. Place pie filling into pie dish, cover with the sheet of puff pastry and bake for 20-25 minutes or until the pastry is a golden brown.

    ***Edited to reduce amount of water and add shortcrust pastry***

    I’ve just made 20 individual pies using the Kmart pie maker with your recipe. I added carrot, celery in the first stage, then 5 minutes before finishing added some mushrooms and peas. I also used coconut cream. It Tastes Devine. There’s only the two of us so now I can freeze the left over pies for later. Thankyou for your recipe I’ll definitely use it again.

    So Easy & Delish!!! Great Recipe. I didnt have bacon, used Chicken Stock Paste, added some finely sliced silverbeet (i'm overloaded with it atm, so it's going in everything), put it in a Casserole dish and topped it with Mashed Spud, dobbed butter on top and baked about 15 min til golden on top.

    This is a delicious pie but I am having trouble with it being too runny. I've read all of the comments and I have tried halving the water but it was still like soup. What are some other options to get the filling the right consistency?

    Made this tonight. Very yummy! I added carrot in the first step, used 2 leeks, left out the bacon, used 1kg of chicken, added mushrooms and baby spinach in step 4 and only used 100g of water. A great recipe!!

    I made this today only instead of 1 big pie, I made quite a few small pies. I also added lactose free cheese, which added  more depth in flavour, I made some with the cheese and some without, they must have been good as hubby had 4 in one sitting.
