Ingredients

Mud Cake
- 200 g Butter, cubed
- 300 g white chocolate
- 250 g Milk
- 160 g castor sugar
- 2 teaspoons vanilla essence
- 2 eggs, at room temperature
- 110 g Self Raising Flour
- 150 g plain flour
Ganache
- 200 g white chocolate, chopped
- 115 g sour cream
- 125 g raspberries, fresh preferred
Recipe's preparation
Preheat oven to 160C/140C fan forced.
Grease and line base and side of a 20cm (base diameter) round spring form or normal cake pan with baking paper.
Add chocolate to TM bowl and chop on speed 8 for 8 seconds.
Add butter, sugar, milk and essence to TM bowl.
Mix on speed 3 at 50C for 3 minutes or until melted and combined.
Cool for 15 minutes.
Add eggs and mix on speed 4 for 10 seconds.
Add flours and mix on speed 3 for 10 seconds.
Scrape the sides of the bowl with spatula, mix for another 10 seconds on speed 3.
Pour into prepared pan; level surface.
Bake for approximately 1 hour 30 minutes
Please Note: Times may vary according to which oven you use. Remove when a skewer inserted at centre comes out clean.
Once cool, remove from pan and place onto a cooling tray.
Place chocolate in TM bowl and grate for 20 seconds on speed 8.
Add sour cream and cook for 2 minutes on speed 3 at 50C.
Scrape down sides and then cook for 30 seconds on speed 3 at 50C or until melted and smooth.
Stand ganache for 1 hour, or until thickened
Spread mixture over top of cooled cake.
Serve topped with raspberries (optional)

White choc mud cakes take
White choc mud cakes take longer to cook than dark chocolate, I think it's to do with the % of chocolate. White choc is only cocoa butter sugar and milk, technically not chocolate. So perhaps you over cooked the dark one.? Next time maybe reduce the heat And cook slower, or just don't cook dark for as long. Also if you cooked two at a time, did you have one on bottom shelf and one up top.? I've learnt it's best to bake a mudcake one at a time in the middle shelf, unless you have a large oven they can fit side by side in the middle, never put cakes or cookies on bottom shelf they overlook. Hope that helps

I made this cake once and it was perfect, so thought I'd try one of the other commentors ideas which was to do white choc in one layer and dark in the other. Both cakes were cooked for the same time as the original and both came out dry and horrible (of course I am eating them smeared in cream, but they're massive and I'm the only one who will touch them bc they really are rather awful). Any ideas on why they'd be dry when the first one was perfect and they were cooked for the same time? or how to revive and moisten them??!!??

Made this for a friends son's christening and received very positive feedback. I did ice with a buttercream frosting instead of the ganache at her request. Making again this week for another birthday cause its so easy. I baked in a 20cm square cake tin as that is all I had and it only took 1 hour and 10 mins to cook.

I have just made this cake
I have just made this cake again (for my son's first birthday now!) but am going to make it double tiered. Bottom white choc mud and the top with dark choc instead of the white - looks great! I also used some of the mixture to make a dozen cake pops and they look PERFECT! Let's hope they taste as good!

Great recipe and the ganache
Great recipe and the ganache is delicious. The first couple of times I made cupcakes (20 large ones took 40 mins to cook and 48 mini ones took 20 mins) and they were "light" so when I made a big cake I did the second mixing process in step 6 by hand to reduce the amount of air going into the cake. Also, when I leveled it off in step 7 I made sure all the surface air bubbles were popped. Result - a lovely dense white chocolate mudcake!

Has anyone found the mixture
Has anyone found the mixture to be really runny? It is cooking at the moment and fingers crossed it is fine but i was quite surprized at how runny the mixture was.
I have made this 3 times now,
I have made this 3 times now, first as a cake (did 1 and half quantities for a high 8 inch cake - fits no problem in TM 31) and twice as cupcakes (cupcakes take about 40 mins to cook at 160 degrees). Absolutely delicious! Made them 3 days early for a party and was still moist and fluffy. I don't use castor - been using raw sugar. Will be my go to for vanilla cupcakes from now on. Look forward to trying with dark chocolate as suggested by some other comments. Thanks for a great recipe!

I doubled the mixture of this cake mix as I needed a bigger cake. It just fit in the thermomix bowl. I just needed to add extra mixing time.
