Pumpkin,Leek & Sweet Potato Soup

Ingredients

6 portion(s)

  • 1 leek, cut into chunks
  • 1 clove garlic
  • 30 grams Butter
  • 400 grams pumpkin, peeled, roughly chopped
  • 300 grams sweet potato, peeled, roughly chopped
  • 500 grams water, adjust to taste
  • 1 tbsp Vegetable Stock - EDC
  • 30 grams thickened cream, optional
  • 1 tsp pepper, to taste
  • fresh basil leaves, to garnish

Recipe's preparation

  1. Place leek and garlic into TM bowl and chop for for 3 seconds on Speed 7. Scrape down sides of bowl.

  2. Add butter and saute for 3 minutes, varoma on Speed 1

  3. Add pumpkin and sweet potato, chop for 15 seconds on Speed 7. Scrape down sides of bowl.

  4. Add water and stock and cook for 20 min at 100 degrees on Speed 1

    (Add simmering basket to top of bowl to allow for steam to come through, and to prevent splatter)

  5. Add cream and pepper (if using) and blend for 1 min on Speed 9 (remember to gradually increase the speed from 1 to 9)

  6. Garnish with fresh basil leaves (roughly chopped or ripped apart)

Tip

This soup freezes well.

    I added some ginger at the beginning and also some celery (as I’m fighting a cold) that with the pepper really gave the soup flavour. Perfect winter warmer. The sweet potato complemented the pumpkin. thanks very yummy (I didn’t bother with the cream) didn’t need it.

    Just made this using potato instead of sweet potato as I didn't have any sweet potato. Added half an onion as my mum loves onion and she's here for tea tonight Wink
    other than that made it as per the recipe. Absolutely delish. Love Plenty of flavour! Having it with crusty rolls for dinner...Mmm, yummm!
    Will definitely be making again. For those that lacked flavour, I don't know what you did differently or if your veggies just weren't flavoursome? I used butternut pumpkin as I find it the sweetest. The other pumpkins are to bland for me Big Smile
