  • 1 onion
  • 2 shallots
  • 1 - 2 medium Celery Stalks, cubed with leaves
  • 1 - 2 medium Carrots, cubed
  • 1 red chilli, cut in half (seeds left in is optional)
  • 500 g chicken breast, cubed
  • 1000 g water
  • 1 tbsp TM vegetable stock
  • Salt & Pepper to taste
  • 120 g vermicelli, broken into 3 cm pieces

Recipe's preparation

  1. Cube chicken, celery and carrots then set aside.

    Place onion, shallots and celery leaves into Closed lid and chop on speed 7 for 4 seconds.

    Add cubed celery, carrots, chicken, chilli, water, vegetable stock, salt & pepper to taste.

    Cook for 10 minutes at 100o on Counter-clockwise operation for 10 minutes on Gentle stir setting.

    Add broken vermicelli and cook for 10 minutes at 100o on Counter-clockwise operation  on Gentle stir setting.

Tip

If you want to hide the vegies from the kids you can add celery and carrots with the onion, etc and chop them in Closed lid.  You may also want to remove the seeds from the chilli

    Quick tasty soup. I cheated. A little and used homemade chicken paste which had great flavour. We also had some leftover roast chicken so I added that with the noodles. I’m not sure if the noodles are meant to disintegrate a little but they did and added body to the soup. Definitely adding this to our takeaway meals list

    Added 1 small potato, 1/4 c froze mix vege in lieu of some ingredients I didn't have. Added garlic and noodles will be udon. Small tablespoon of tomato paste too. Got a sick kid home so hoping a good chicken soup will cure!

    I sauted the onion and celery leaves added garlic too. I also put parsley in in the last 5 minutes. Didn't have noodles in the pantry so used spaghetti.
    Great flavor in such a short time.

    Soup made on this recipe alone was OK, lacked flavour though so I added more stock and a can of creamed corn and it turned the soup into a hit. The chilli was nice and warm on the throat which was nice while I suffer a head cold Wink

    I enjoyed this, but will add more vegetables next time. Will probably use a chicken stock instead also. I added four cloves of garlic and used a small chilli (no seeds). It was nice, but a little bland. Thanks for sharing the recipe. A good base for me to build upon.  tmrc_emoticons.)

    well followed every step but it did not taste like the chicken soup we usually make.

    Maybe we missed the bone or the amount of pasta was to much.

    Sad to say was just not what we were looking for

    This is very delicious! My fussy kids shouted, "Hooray! Chicken soup!" when I offered the left overs for lunch the next day! The only complaint was that it dribbled off their chin!! Love

    My GLUTEN FREE variation was: I sauteed the onions in garlic butter (3 minutes @ 100, speedGentle stir setting) before adding the water and vegies, used a Coles Real Chicken Stock 1ltr instead of the 1000gm of water and put cooked chicken in at the end (had no raw). For the noodles, I cooked San Remo GF Spaghetti in a saucepan and added an amount to each bowl at serving. To make the vegies appealing to the kids, I sliced them thinly instead of cubing and we had carrot 'money' and celery 'moons'. Oh, and no chilli!

    The Man of the House had to make this for the rest of us who were sick. Under orders he added garlic and ginger as bug-killers, and used chicken cut straight from the freezer.

    It was just what we needed! We had enough for it to be lunch for 2 x 2 days as well.

    Was lovely and slightly thicker when reheated on Spd 2 for lunch.

    I used extra chilli & garlic and ginger and sautéed these with the onion, added home made chicken stock and sliced chicken thighs and some sweet soy sauce, it was delicious thanks. As I had an extra person to feed, I soaked my vermicelli in separate bowl and served that into bowls then added the soup. Will make this one over and over.

    I made this tonight! Exceeded expectations. I added some garlic as suggested in previous comments and was a hit! Our household is currently going grain free so also just left out vermicelli and used slightly less water. Took out the servings for the adults and then wizzed for a few seconds on speed 4 to chop it up for the toddlers so the chunks were less overwhelming. They LOVED it! tmrc_emoticons.)

    Great soup, however I think next time I will amp up the flavour a little by adding some garlic at the start with the onion and cook it for a little on its own before adding the other ingredients. I think it will just give it a little lift. But otherwise a very nice little soup.

    I altered the recipe slightly and added a few stalks of fresh thyme and 3 large tbsp of chopped continental parsley. I cooked it for an extra 10 mins before adding pastina. I served it with freshly grated parmesan. YUMMO
