Musk Sticks

Ingredients

40 portion(s)

Natural Colour

  • 1 Beetroot, peeled and quartered
  • pink food instead of beetroot, if you don't mind artificial

Musk Sticks

  • 700 g raw sugar
  • 100 g Boiling water
  • 50 g glucose syrup
  • 2 teaspoon gelatine, or 3 sheets
  • 1 teaspoon musk oil flavouring

Accessories

  • 1 piping bag, disposables are great
  • 1 star piping nozzle 1 cm diameter

Recipe's preparation

    Pink Colour
  1. Chop beetroot 6 seconds speed 7.

    Put into bowl and add boiling water.

    Allow to steep then strain using basket keeping 60ml of pink liquid to use as colouring.

    If using artifical colour you will use a few drops.

     

  2. Musk Sticks - 10 mins to make 12 hours to dry
  3. Mill the sugar in 2 batches of 350g (otherwise it won't be as fine) 1min speed 9 for each batch. Set Aside. (you can use icing sugar instead if you don't want to do this step)

     

    Add 60g of the coloured water, the glucose syrup and the gelatine into the TM bowl. Disolve the gelatine 37degrees, 2 mins, speed 1 .

     

    Add butterfly.

     

    Add 1/3 of the sugar to the bowl and mix 20s, speed 2 (scape down the sides to make sure it all gets mixed in).

    Add the second 1/3 of sugar and mix 20s, speed 2 (scraping down sides again).

    Add the last 1/3 of sugar and the flavouring and mix 20s speed 2 making sure all ingredients are mixed into a paste like mixture (yum!)

    Put into a bowl ready to put into your piping bag.

     

     

     

     

  4. Piping
  5. Add the mixture to a piping bag and pipe your musk sticks onto baking paper.

    To get 40 make them about 6cm long.

    Allow to dry for 12 hours (if you can wait that long!)

    tip -So that the bottoms dry too, after the top has set (about 2 hours) gently lift with a spatula and flip over.

Tip

I got my musk oil flavouring online from a cake decorating place - just google to find one it costs about $5 for a small bottle which will last you ages.

If the mixture is not thick enough add more powdered sugar (600g makes softer musk sticks)

    Great recipe. Took a couple of days to dry due to high humidity. Also found it better to use wax paper instead of baking paper. Easier to peel the musk sticks off to turn over & dry.

    It's now added to my favourites. Love it, and so does everyone else who has tried them tmrc_emoticons.)

    Great school holiday fun with my kids, but the mixture was a bit hard to pipe. Will try a little more water next time. Can't wait for them to dry out enough to eat!

  • My mixture was incredibly

    My mixture was incredibly thick, such that the butterfly wouldn't move. Not sure if I missed something?  I used 60g water with coloring and 50g glucose. Is this the only liquid? Added extra liquid several times. Ended up having to hand mix.

    Hi Eliza the consistancy might vary with the humidity in the air so adding more sugar to ensure the mixture is quite thick should fix this for you alternatively add liquid bit by bit untill the right consistancy which may mean adding a little less liquid. They brought me right back to my childhood when I made them- alice tmrc_emoticons.)

    They taste exactly the same as shop bought ones! How do I make them firmer and hold the 'star' shape? Should I let the mixture sit in a bowl for an hour or so or should I just add more sugar?
