Sauce

  • 2-3 cloves garlic
  • 1 onion, halved
  • rice bran oil spray
  • 2 cans Whole tomato
  • 150 g mushrooms, sliced
  • 2 small red capsicums, sliced
  • 700 g chicken breast, cut into 3cm cubes
  • 50 g Kalamata Olives
  • 5 g salt
  • papper to taste

Recipe's preparation

    Sauce
  1. Add garlic and onion to bowl and chop sp7/3sec. Srape down sides.

  2. Spray tmx bowl with rice bran oil and sautee 2mins/varoma temp/sp1.

  3. Add canned tomatoes and chop 10secs/sp3.5.

  4. Add sliced mushroom, capsicum, salt and pepper, cook 17mins/100 degrees/Counter-clockwise operation/sp1.

  5. Add chicken to varoma tray and cover with lid.  Place on tmx and cook for 7mins/varoms temp/Counter-clockwise operation/Gentle stir setting

  6. Add broccolini to varoma base and cook further for 10mins/varoma temp/Counter-clockwise operation/Gentle stir setting.

  7. Sir in olives and chicken into sauce with spatula before serving.

Tip

If cooking pasta - Boil a jug of water and fill thermoserver with boiling water before you start to cook. Cover let thermoserver heat up.  Fill jug with water and boil. When chicken goes on empty thermoserver and add desired amount of pasta cover with boiling water and cover with lid.  Allow to cook in thermoserver for approx. 15mins or until desired texture is achieved.

If using smaller chunks of chicken cook for less time so it doesn't overcook.

    So good!!!!                     

    I halved all the ingredients and cut a few minutes off the cooking times. Added some chilli and served with couscous and green beans...perfect!!

    I used 2 cans of diced tomatoes as hubby likes lots of sauce and i love left overs. 

    We found that the sauce was great as a "salsa" dip when cold with corn chips tmrc_emoticons.-)

    Tasty but created way too much liquid! Could be because I used diced toms instead of whole (I didn't follow the tomato chopping instruction to counteract) tmrc_emoticons.)
