Quick Homemade Sour Cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Insert Butterfly Whisk into Thermomix Bowl

     

    Add cream, lemon juice and salt 

     

    Set at speed 3 for about 2:30 mins or until thickened

    Great recipe! I had never thought of making sour cream before but as the shop had run out and I needed it for Beef Stroganoff, I went searching for a recipe. I used pure/pouring cream because that's what I had and used it straight away- problem solved!

    Not sure what "thickened" cream is. Tried with UK "single cream" with a spalsh of leftover double cream. This turned to butter at around 2 mins. Sad
    I suggest you set the timer for 30 seconds or so and add more time if necessary.

    Great recipe! It only took 1.5minutes to get the sour cream result for me. Look its so lovely and tangy like it should be. I needed sour cream for my cornbread for Thanksgiving tomorrow and didnt have any but i ALWAYS have thickened cream. Thanks for a great recipe.

    Thanks for this, came in very handy when I went to make potato bake and ran out of sour cream so I made my own. Only thing I would say is watch the salt, I put a little too much I think.

    Easy enough for the kids to make. We used long life Lime juice instead of fresh lemon juice.  Enjoyed this with chorizo stew. Very yummy, such a good idea to do with long life cream. Never be without sour cream

    Never mind tried it anyway. Made it with long life wiping cream, all I could get. Ive made two batches now. Such a simple recipe. Second time I increased the lemon juice. We've had no left overs, that should tell you everything tmrc_emoticons.)

    Have you tried this with normal cream? I live in southern China and cream of any kind can be a bit hard to find. Thickened is almost impossible.
