Raw Caramel Slice - Paleo/V/Egg and dairy free/GF

Ingredients

12 piece(s)

Date Base

  • 100 grams Desiccated Coconut
  • 100 grams dates, pitted
  • 1-2 tablespoons carob powder, depending on your taste. You can use cacao powder instead

Caramel Centre

  • 250 grams macadamia, unsalted or you can use cashews (unsalted)
  • 180 grams dates, pitted
  • 1 teaspoon vanilla extract or vanilla bean paste

Chocolate Topping

  • 70 grams Maple syrup
  • 120 grams coconut oil
  • 3 tablespoons carob powder

Recipe's preparation

  1. Base:

    Place all ingredients into bowl and mix 35-40sec sp7 until you achieve a crumb like texture. It should be moist or sticky. evenly spoon some mixture into lightly greased muffin tray, silicone muffin tray or small tart tray/dish for a square or rectangular slice. Press mixture into base.

    Wash bowl (optional)

     

    Caramel:

    Place all ingredients into bowl and mix 40sec sp7 or until smooth. Spoon mixture on top of base and press gently so they stick together.

    Wash bowl (optional)

     

    Chocolate:

    Place all ingredients into bowl and mix 20sec sp7. Scrape sides of bowl. Mix for further 10sec sp7 and pour over caramel. Place tray or dish in freezer for 20 minutes then enjoy!

Tip

You can substitute nuts with others. You can substitute carob powder with cacao powder. 

NUT ALLERGIES - substitute nuts for frozen banana and avocado! 

Don't wash the bowl after you make the chocolate mix, add some milk - make hot chocolate or add ice cream for a yummy smoothie!

    A big hit with the entire family including my mother in law who is a sweet tooth.... She could not believe that this is paleo version,,,, lol! my base might have been a bit dry but it was still yummy! And used cacao instead of carob as I have it in my pantry.

    This recipe is a new favourite. I love the no fuss ingredients and method. I wiped the bowl out with paper towel as we went and only cleaned it for the final step. We also used cacao powder the whole way through as we don't have carob. I added grated loving earth chocolate at the end (mint worked a treat).

    Hi and thank you! I never have troubles with silicone trays so give that a go ☺️. I use coconut oil to very lightly spray the silicone trays, you can get it in a spray form. I also have Tupperware ice trays with the little push bubbles to push the ice block out,  Perfect for bite sized snacks for little kiddies or if you only want a small treat x

    All I can say is "Wow!" These are amazing! The only thing I had trouble with was getting them out of the patty cake tray. I'll use a silicone one next time. Just out of curiosity, what do you use for greasing the tray? I used butter but I'm thinking I should have used coconut oil.

    Hi Rochelle. I leave these in the fridge as the coconut oil content may melt if left out. My recent batch has been in the fridge for 4 days and still very tasty and beautiful texture. So glad these are a hit!

    Pleasure! Glad you enjoyed them. Today I used salted macadamia for a salted caramel slice - oh my! I had extra caramel left over so I added carob and rice milk and made a delish smoothie! No wastage here
