  • 340 g water, (I use straight from tap)
  • 2 tsp dried yeast
  • 2 tsp sugar
  • 540 g bakers flour, (if humid or very hot I use 550)
  • 2 tsp salt
  • 2 tsp bread improver
  • 2 tsp powdered milk
  • 1 1/2 tsp Wondersoft (All about Bread), optional
  • 20 g olive oil

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add all ingredients into TMX bowl in order as listed, mix speed 4 for 7 seconds until combined.

    2.Dough modeKneed for 7 1/2 minutes.

    3. Spray a large bowl with a little cooking oil and place dough in it and cover with clingwrap. Or use your mat

    4. Place bowl or mat in a spot just in room temp to rise for at least an hr or until doubled in size. If your in a hurry place in a warm spot.

    5. Knock out air and turn dough onto a oiled bench and belt dough flat. mould into shape and place dough into bread tin and sprinkle with seeds if desired. I roll my dough into a rectangle then roll it up and cut into 4 pieces, tuen each piece 45 degrees and place in tin. cover with greased clingwrap.

    6. Put back into same spot to rise again until just at top of tin or if using a lid about an inch below lip.

    7. Place in cold oven and cook at 190 degrees for about 40 mins or until golden brown.

Tip

1. If you dont have a warm spot for dough to rise, place a glass of water into microwave on high for 3 minutes, then place your bowl into microwave leaving glass of water in there but DO NOT turn microwave on.

2. I usually do both my rise's just sitting on kitchen bench.

3. The Longer you leave your dough to rise especially your 1st rise, the softer and fluffier it will turn out.

    Easy recipe.

    I just love recipes that are just fool proof and this is one of them!

    I didn't know what Wondersoft was so I omitted it.

    Loaf proved for almost 3 hours in total and was just exceptional.  Lovely, flavoursome and fluffy.
