Easy Chicken Satay

Ingredients

4 portion(s)

Sauce

  • 1 onion, halved
  • 2 garlic cloves
  • 30g oil
  • 120g crunchy peanut butter
  • 200g water
  • 1 tablespoon TM vegetable stock
  • 90g honey
  • 40g grainy mustard
  • 2 teaspoons curry powder
  • a few dashes Tabasco sauce, (to taste)
  • 2 pinches ground cardamon
  • 500g chicken thighs, diced

Recipe's preparation

  1. 1. Add onion, garlic and oil to the bowl, chop for 3 seconds, speed 7.

    2. Sauté for 3 mins, 120 degrees or Varoma, speed 1.

    3. Add all other ingredients, with the chicken last.

    4. Cook for 12-15 minutes, 100 degrees, Counter-clockwise operation, speed soft. Leave the MC off if you want the sauce to reduce more.

Tip

Serve with rice and vegetables.

This sauce is very versitile, you can use beef, prawns or vegetables in place of chicken. You can cook the sauce by itself and pour over things instead of cooking veggies/beef/chicken in it. I would just cook it for about 5 minutes to reduce and mix all the flavours together.

You can also increase the quantity of chicken, ensuring you don't go over the maximum line inside your Thermomix bowl. Chicken breast also works well.

It freezes very well. And my kids love it!

This is a great mid-week meal, something to get on the table quickly.

    I've made this many times and it is an absolute hit with everyonetmrc_emoticons.-).
    I replaced 200ml water with 200ml coconut milk.
    Instead of 90ml honey I use 45ml honey & 45ml Sweet Chilli Sauce.
    Add a tin of water chestnuts 10 minutes before the end of cooking.

    I loved this recipe. I didn't have Tabasco sauce and didn't replace. 6 min from the end I added a hand full of cut up fresh beans and half a small chopped capsicum. I also used 500g of sliced chicken breast. The consistency was perfect! Thank you 😊

    Such a delicious dinner! My husband and I were almost licking our bowls by the end of it. I added peas and green beans to sauce and a little cornflour to thicken it up. Very impressed with the flavours.

    Mmmm, this was good, and has gone in my favourites folder! I followed some previous comments, and used only 1/4 cup of water - next time I won't use any. I also put in 750 g of chicken and only used 40g of honey, any sweeter would have been unpleasant. I found that I didn't have any mustard (seeded or otherwise) so after a quick Google search used 10 grams of wasabi instead. Although it was really good, next time I will play around a bit and use more peanuts and chillis.

    This was super easy and really delicious! I used 1kg chicken, coconut milk instead of water & used simmer basket on top during cooking. Added sliced zucchini at end and stirred through, let it sit for 10 mins and it stayed crunchy.

    Delicious recipe! I'm a huge fan of satay chicken and this recipe did not disappoint.

    I will try a few alterations next time like reducing the honey and peanut butter, and adding more curry powder as my husband likes a spicier and less creamy satay. This was perfect for me though and so easy!

    Really tasty! I found it quite saucy so might add extra chicken (or less liquid) next time. I added 60ml of coconut cream in place of some of the water and it was delicious and creamy. Will be my go to satay recipe from now on!

    This will definitely be a regular dish in our house tmrc_emoticons.)
    It was so quick and easy plus everyone loved it, even the fussy kids!
    I used coconut milk instead of the water and no tabasco sauce or caramon (because I didn't have any on hand) but it was still amazing.
    I served with rice and greens.

    This was amazing! Made a few changes, based on other comments and what was available in my fridge: added a carrot and some cauliflower, popped some coconut milk in with the water, used beef stock and English mustard (didn’t have any vege stock or seeded mustard), didn’t put in any tobasco (had none) and I served it with coconut rice.
    This will definitely become a frequent dinner in our house.

    This turned out even better than I could have imagined! The flavour, it's amazing! I used the no sugar peanut butter and did reduce the honey a little - but wow, this was amazing. I also cooked my chicken in the pan and just added it at the last 2 minutes and stirred through. I just had mine with greens as I'm trying to go low carb!

    Not a bad recipe, I found it to be a little on the salty side and lacking something although I'm not sure what. It was a bit 'pasty' but that could be the quality of peanut butter I used too. Next time I will decrease the veg stock, and add some coconut milk to hopefully cut through the richness & add another dimension. A great place to start though for a satay, but I find satay is such a personal preference!! Thank you!

    As I don’t like honey in cooking I substituted sweet chilli sauce for the honey and left the Tabasco out. I also used chicken breast last time I cooked this however I pan fried it a bit and then just added it for the last couple of minutes of cooking.

    Yum! Loved this recipe. I read through the comments and made some alterations based on the comments
    - Replaced the water with coconut milk
    - instead of 90g honey I used 50g honey and 40g sweet chili sauce.
    - left out the cardamom (didn't have any) and Tabasco sauce

    Served with rice (mixed it together for my 2year old so she just eating 'rice' and it was hit!

    This is DELICIOUS! I made this last Friday night instead of buying takeaway and served it on BCB steamed rice. I don't usually like the nutty texture of satay but I opted to use a smooth peanut butter and djon mustard so it was a silky smooth sauce! I also squipped the tobasco sauce and cardamon. I made it in the morning, so it was ready to heat for dinner. Heats great and doesn't lose any deliciousness!

    I also doubled this recipe last night for my family. I cooked it for 18 mins and then another 7 without the MC (25mins in total). YUM!

    *We had some left over, which I have frozen but not yet eaten. Hopefully it defrosts well tmrc_emoticons.)

    Yummo. Made this last night. Like others I swapped water for coconut milk, I cut down on the curry powder but added a kick with chilli (in with the onion). I also omitted the honey and went for a glug of sweet chilli sauce. I had no cardamom or tobasco. Thanks for sharing.
