- 80 g rolled oats
- 80 g dessicated coconut
- 100 g brown sugar

Recipe's preparation
1. Preheat the oven to 180C (160C fan forced) and line a baking tray with baking paper.
2. Put the butter and golden syrup into the bowl and melt 3 mins/70 degrees/speed 2.
3. Once melted, add the bicarbonate of soda and mix 5 sec/speed3.
4. Add all the other ingredients and mix 10 sec/"Counter-clockwise operation" /speed 4 to combine.
5. Roll the mixture into walnut shaped balls and place onto the baking tray, roughly 5cm apart.
6. Flatten each one slightly and bake in the oven for 10-12 minutes until golden brown.
7. Set aside for 5 minutes and then place them onto a rack to cool.

Made these today using half the oats and half cornflakes which needed using up! Also GF Flour and Plant hard margarine instead of butter. Followed the tip of leaving in the oven with the door ajar to cool.

I tweaked a little for personal preference by reducing bircarb soda to 3/4 tsp as I could taste it a little in my first batch and added 40 grams water so they would spread a little more. Added sultanas to keep husband happy. Cooked 160°C fan forced for 12 mins, turned oven off and let the biscuits rest in the oven for 10 mins before taking out to cool. (Just a habit I acquired from my Mum so the outside of biscuits crisp up a bit more.

So, I made these again today with my 4year old son, and they were completely different. The mixture was really sticky, and I couldn't even form them into balls. When they cooked they were a lot softer and almost cake like. I'm not sure what I did different, only thing I did realise is I must have use baking powder the 1st time round rather than bi-carb. I am not a fan of the softer version and much preferred the crunchier cookie that came out the 1st time round.

I made these today, and they are nice. I reduced the sugar as I didn't want them to be too sweet, and they weren't really that sweet. Maybe as I used coconut sugar and rice malted syrup. I also threw in some sultanas at the end, and may have burnt them a bit. I was worried they would be too chewy, but they are much crunchier than I expected from the reviews (I did flatten them a bit though). They are also more dense than I expected and can slightly taste the baking powder. Thanks for sharing 😊

I have been making these
I have been making these nearly every week for the last 4 or so weeks. I take them in to work. I change the recipe around and add my own twist like 25g water. I put in 2 weetbix instead of oats. I've even put in some marshmallows. You have to scrape down the bowl. You have to leave them to set first before moving them on to tray.

Love this recipe. I have tried many anzac biscuit recipes and am happy with this one. I doubled it and consequently had to mix it for longer at the end. Next time I would probably put less coconut and more oats just because we are not big fans of cocnut. I put 160g brown sugar rather than 200g (doubled). Wouldn't do any less sugar or the biscuits become crumbly. This made 44 biscuits doubled.
