Best Thermomix lemon drizzle cake

Cake Mix

  • 2 eggs
  • 175 g sugar
  • 150 g unsalted butter, Softened
  • 175 g Self Raising Flour
  • 125 g Milk
  • 2 tablespoon lemon rind
  • 1 pinch ssalt

Lemon drizzle

  • 150 g icing sugar
  • 50 g lemon juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cake method
  1. Preheat oven to 180C. Grease and line a 20x30cm baking pan. 

  2. Insert butterfly. Add egg and sugar, 1 min/speed 4, scrape down, 1 min/speed 4. 

  3. Remove butterfly. Add softened butter and lemon rind and mix 10 sec/speed 3.

  4. Add flour, milk and salt and mix 3 sec/speed 5, scrape down, 3 sec/speed 5. Do not over mix. 

  5. Pour mixture into prepared pan and bake for 25-30mins or until golden. 

  6. Lemon drizzle method
  7. With a washed and dried bowl add lemon juice and icing sugar and cook 5 mins/120C/speed 2.

     

     

  8. Using a skewer poke holes all over hot cake. Pour drizzle over cake and allow to soak in before cutting.

    This is an excellent, light, fluffy (but thin - which is a-ok) cake that everyone in our household loved. I used 125 grms of sugar in the cake and I'll reduce it further next time and up the zest as we like it particularly tangy.

    This is my go-to cake - everyone loves itand it's so quick and easy to make. I also only use 125g of sugar as others have done and use whatever butter I have to hand. For the drizzle I use a small saucepan and gently heat 100g of icing sugar with the juice of a small lemon - this makes the perfect amount I think.

    Is this supposed to be cut while it is still hot? I let it cool off quite a bit and had trouble getting it out of the tin. Was stuck to the baking paper. Doesn't look the best but still completely yummy.

    I made this cake with my eight year old son and it turned out beautiful and even he, who insisted he wouldn't like it as says he hates lemons, loved it. I reduced the sugar in the cake to 125g and reduced the icing sugar in the syrup to 100g and it turned out lovely, not to sweet with a nice tangy flavour.

    Gorgeous - light, fluffly and YUMMY. Reduced the sugar like other posters and also the amount of syrup. Wasn't sure on what temp to cook syrup - just did it at 80 degrees and it worked out.

    Definitely will be adding this to my baking repertoire!

    Made this tonight and was delighted with the result! Light, moist cake and just lemony enough. I reduced sugar in the cake to 125g as per other reviews. I also only used 50g icing sugar & 45g lemon juice for the syrup but was enough to drizzle the whole cake. Yum! Thank you.

    Sensational ! Thank you for such an awesome little recipe 😀. Quick, easy, so so tasty. I did cut the sugar back to 100g and used raw (ground first) and I used raw again for the syrup (ground again). But this cake is just fabulous. Will be a regular for us!

    Realpy yummy cake. I used 100g of coconut sugar so it was quite brown at the end and it didnt rise much. I didnt use the thermie for the icing as it was busy cooking something else, so just microwaved a small amt of icing sugar and lemon juice together. Cake is def best eaten when it has cooled right down as it wasnt quite as tangy later.

    Excellent to find a  recipe I love to make adapted to TM. I used 160 g sugar ( which I'm glad I pulverised a little first as I used raw sugar) . I only used 100g icing sugar to 40 g lemon for the drizzle. It turned out quite thick ( in the original recipe it wasn't to be boiled) but absorbed easily into the cake. The result was a soft , fluffy delicious cake.  Love

    Beautiful! We had friends pop in as this was being made and he loved it so much I gave him some to take home. I only put 140g of sugar in and it was fine. I would even make the cake without the drizzle but that is a nice touch too. Will definitely make again.

    Made this for afternoon tea today - made exactly as recipe stated (although I might've used a little more lemon rind, I didn't measure, just zested 2 lemons & chucked it all in!) and didn't have a 20x30cm pan, so used a 20cm round tin, and it was fabulous.  Total cooking time was about 45 mins (but that's normal for my oven).But it was sooooooooooo fluffy, lemony & heavenly!  Thanks for a brilliant recipe!

    LOVE,LOVE this cake!!! I only put 120g of sugar in the cake mix as Doc has told me to cut down. It worked perfectly well as I kept the drizzle as per recipe. Tastes divine on its own and even better as a dessert, slightly warmed with vanilla ice cream... Hubby loved it too. Lemon lovers.. Thanks for this recipe

    My son absolutely loved this cake.  I halved the sugar in the cake and the drizzle - it was still sweet to me.

    I tried to make the drizzle first (so I did not have to wash the bowl) but the result was the thermomix bowl was hot.. which melted the butter and it was not supposed too.  Still it tasted very delicious!
