  • 135 grams Butter
  • 12 Digestive biscuits
  • 45 grams caster sugar

  • 400 gram can of sweetened condensed milk

Recipe's preparation

    Crust
  1. Preheat over to 175 degrees and slightly grease 22cm pie dish.

  2. Melt butter in Thermomix - 4 minutes at 70 degrees on Speed 1.

  3. Add Digestive biscuits and caster sugar - mix on Speed 4 for approximately 10 seconds.

  4. Press mixture firmly into base and sides of pie dish.

  5. Bake in oven for ten minutes, then allow to cool.

  6. Filling
  7. Insert butterly and beat egg yolks for approximately 30 seconds on speed 4.  

  8. Continue beating on speed 4 while gradually adding the condensed milk through the hole in the lid - approximately 2 minutes. 

  9. Continue beating on speed 4 while adding lime juice through the hole in the lid - approximately 30 seconds.

  10. Pour filling into pie dish and bake in oven for 15 minutes, then allow to cool before refrigerating for a few hours (or put in freezer for a shorter period if you're in a hurry).
