Fruity Dream Mix

  • 600 grams frozen pineapple, Can be Freshly Frozen
  • 3 leaves Kaffir Lime, Stems Removed
  • 80 grams raw sugar
  • 1 juice of 1/2-1 lime or lemon, No pith or zest
  • 2 Raw Egg Whites, OR
  • 100 grams Meringues

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add Lime Leaves & Raw Sugar & Meringues (if using) to the Mixing Bowl with MC in place. Mill 15sec/spd 10 - If lime leaves are still too big... Scrape down the sides of your bowl & repeat.

    2. Add Frozen Pineapple, Lime/Lemon Juice & Egg Whites (if using) then Mix 40secs/spd6-7 untill well crushed.

    3. Insert Butterfly Whisk and Whip 40sec/spd4 or until silky smooth without measuring cup.


    Serve immediately & freeze any leftovers in a shallow container such as a slice keeper.

Tip

The sweeter the Pineapple the more you can reduce the sugar content. Best to buy Pineapples when in season to reduce cost & so you support Australian grown.  Cut them up and store in pre-weighed ziplock bags in your freezer for when they are out of season & costly. Costco do sell large 1.6kg bags of frozen Pineapples for between $11-$12, but sadly they are not Australian tmrc_emoticons.(
