Butter Chicken

  • 1.5 --- chicken thighs, kilos cut in pieces
  • 4 cloves garlic, crushed
  • 2 teaspoons garam masala
  • 2 teaspoons Ground Coriander
  • 2 teaspoons ground cumin
  • 1/2 teaspoon sweet paprika
  • 140 grams yoghurt
  • 50 grams Butter
  • 2 tablespoons white vinegar
  • 410 gram can tomato puree
  • 2 tablespoons tomato paste
  • 1 tablespoon Vege Stock Concentrate
  • 5 bruised caradamon pods
  • 1/2 teaspoon ground cinnamon
  • 125 grams cream

Recipe's preparation

    Butter Chicken
  1. 1. Combine chicken, spices and yoghurt in a large bowl, cover and refrigerate from 2 hours to overnight.

    2. Melt butter, in TM bowl.1.30 min, 100 deg.speed 1.

    3.Add chicken mixture to TM bowl, cook 10 minutes, 100 deg, Reverse speed 1.

    4.Add remainig ingredients, except cream. Cook 20 minutes,100 deg, Reverse, speed 1.

    5.Add cream, cook 1 minute,100deg, Reverse, speed 1.

    Serve with rice

    This was the best butter chicken I have ever tasted. So easy and quick to cook. Next time I will cut the chicken pieces up much larger as they were shredded a bit. Flavour is amazing.

    This one of the best butter chicken dishes I've made so far. The recipe is also easy and there are relatively few ingredients. I added a half teaspoon of cayenne pepper for added flavour. It will definitely be a regular dish in our household tmrc_emoticons.)

    Loved this one.  After reading the other comments about the sauce being too runny I grabbed a handful of raw cashews and grinded them down, then set them aside as the first step.  Then added them in at the end.  It thickened the sauce up beautifully.  I too used chicken breast, I left them in big pieces and even though it shredded a bit because the pieces were bigger it wasn't too bad.

    This is the best butter chicken recipe I have tried so far and my whole (very fussy) family love it. I use breast chicken and cut it a bit bigger than normal and only cook it for 20 mins to prevent shredding. As suggested by one of the consultants at a cooking demo I went to, once its all cooked and you have put it in the thermo server to serve you can add a handful of fried shallots and that magically thickens up the sauce (it doesnt change the taste at all)  Thanks for the recipe  tmrc_emoticons.)

    Mine turned out extremely watery.. The flavour that was there was nice but because it was too watery the flavour was very diluted.. we are going to try and adjust the recipe to get the most flavour out of it. Thanks for the recipe

    Tastes great. I used chicken thight and left it on soft speed reverse and my chicken was fine , no Shredding. I did find the sauce to be a quite runny so i added some corn flour for the last minute

    I halved the ingredients and it didn't work out great. Maybe I shouldn't have halved the spices as it was a bit lacking in flavour. It was also quite watery and the chicken got a bit shredded.

    Yes, my chicken shredded. Do I care? NO! This was absolutely scrumptious!!! So very yummy and I'm never buying the stuff in a tin again. The kids loved it and I feel like I've been at an Indian restaurant. House smells yummy too. A weekly recipe for us now!

    Big SmileSuper easy and really yummy. As a lifetime of being a 'non-cooker', I found this recipe really easy to get through (I used thighs as per all the comments have recommended), and all my guests loved it. We love a bit of spice so I will add a few chillies next time, but that's a personal choice, and the base recipe here is great for an all-rounder dish - the kids loved it too.

    I've only had my Thermomix 3 weeks so still getting use to it I don't eat red meat so chicken for me is always on the menu and I only eat breast meat no bones or any other part of the chicken when I cooked it the breast meat was fine turned out perfectly tmrc_emoticons.-)

    I am hoping to try this recipe this week, there are a few comments about the chicken shredding, my Consultant told me always use THIGH in the bowl and BREAST in the veroma. I'm wondering if the people that had shredded chicken used breast in this recipe?

    OMG - this is the BEST!! My kids never, ever ask for seconds and this time they did. Chicken didn't shred, used first half soft stir, then 1 speed. No Probs. I also added one potato cut into small cubes after the first 10 mins. This is a permanent in my household - thanks!!!

  • I cooked on reverse speed

    I cooked on reverse speed soft throughout the recipe and cut the cooking time in the first stage (cooking the chicken mix in the butter) to about 4-5 minutes - that was where the chicken started to look like it might shred.

    Once the tomato puree etc was in the bowl it held together well.

    My chicken pieces were on the larger side of 3cm  ....  Chicken didn't shred and it was very nice.

    My chicken breast chopped to 3 cm cubes was shredded after only a few minutes even though I followed the recipe to the T. tmrc_emoticons.-( As I a new user to Thremomix I lost confidence, bailed and used the stove top to resurrect the mushed dish. I was definetly following the directions as had read the blogs prior to cooking ! Flavour was great thought, thank you.

    Hi Brimlo.  I wonder if you noticed the REVERSE instruction in step 4?  If you weren't in reverse, it would be understandable that the chicken got shredded.  Maybe make bigger chunks next time??
