Banana coconut bread

Ingredients

0 portion(s)

  • 40 grams Butter
  • 100 grams brown sugar
  • 230 grams ripe bananas, About 3 bananas or 1 cup
  • 1 egg
  • 250 grams Self Raising Flour
  • 1 teaspoon baking powder
  • 2 tablespoon Milk
  • 50 grams desicated coconut

Topping

  • 1 tablespoon sugar
  • 1 teaspoon ground cinammon

Recipe's preparation

  1. Prehead oven to 180 Celcius. Grease and line base of a loaf tin.



    1. Place butter, sugar, egg and banana in TM bowl and mix on speed 5 for 10 seconds then scrape down sides.



    2. Add flour, baking powder, coconut and milk and mix on speed 5 for 4 seconds or until combined. Pour mix into loaf tin.



    3. Mix topping ingredients and sprinkle over the top of the top.



    4. Bake for 40-45 minutes or until golden brown

    Banana coconut bread was nice!

    I Used:
    60g butter
    90g brown sugar
    360g very ripe bananas
    1 egg

    260g SF flour
    1 teaspoon baking powder
    20g desiccated coconut (didn't have 50)
    thus added a handful of frozen blueberries at the END
    2T dry chia seeds
    1T cottage cheese solids (didn't have milk, and 360g bananas was quite a lot over the specified 230g or even other users' 310g)

    Did not bother with topping

    Cake was lovely. Batter really tasted too sweet but final product was only mildly sweet. Not so coconutty as I would like but then I only had 20g coconut. Could not detect chia seeds as the desiccated coconut already gave some "chew" to the cake texture

    next time will try reducing sugar to 80g

    Great recipe that I'm making for the third time in a week to use up some bananas. I think the coconut works - I used the moist flakes. Have not tried the topping and won't bother as its perfect on its own.

    I got my thermomix on Monday and this was the first recipe i attempted in it on my own, made a few minor modifications by reducing the sugar amount by half and added 2 teaspoons of cinamon to the batter and it was delicious, this will become a weekly bake for me. thanks for sharing the recipe tmrc_emoticons.-)

    These were so very easy to bake! Personally found it a little drier than I expected.  Retrospect Probably should have popped the whole 3 bananas in, instead of capping it at the 230g. I also reduced the sugar to 110g as we dont like things too sweet. Just needs a good slather of butter to go with it once its cooled & the dry doesnt matter.  Having said that, the kids ate the lot within the day! tmrc_emoticons.-)

    150g sugar 

    Had no baking power so used 1/4tsp bicarb with 1/4 tsp sour orange juice because I had no lemons

    I really enjoyed this version, I have tried a few and this is now my go to recipe. I used wholemeal flour and cut the sugar down to 50 grams dark brown sugar and 30 grams of stevia and it was perfect. My 3 bananas weighed in at 310 grams.

    Amazing! My modifications: 

    60g butter

    100g dark sugar

    1 tsp cinnamon in the mixture

    1/2 tsp nutmeg

    1tsp vanilla extract

    gluten free flour.
