Spiced Lemon Chicken Salad

Ingredients

Chicken

  • 500 g chicken breast, - largely diced
  • 1 lemon, - juice only
  • 20 g olive oil
  • 1 sprig rosemary, - foliage only
  • 1 pinch salt and pepper, - to taste

Spiced Yoghurt Dressing

  • 125 g natural greek yoghurt
  • 75 g mayonnaise, - made in your TMX, of course
  • 2 limes, - zest and juice
  • 1 tablespoon fish sauce
  • 1 teaspoon rapadura, brown or palm sugar
  • 1 clove garlic
  • 2 cm ginger, - peeled
  • 1 tsp ground tumeric
  • 1/4 cup fresh coriander leaves
  • 2 cm red chilli, - seeds removed

Salad

  • 120 g baby spinach leaves
  • 1 bunch sunflower sprouts, - or any other kind of sprouts
  • 1-2 cups salad vegetables of choice, - capsicum, snow peas, beans, cherry tomatoes, carrotts etc.
  • 2 teaspoon pine nuts, - toasted

Recipe's preparation

    Chicken
  1. Place rosemary in TMX bowl and chop for 3 seconds on Speed 5.  Add olive oil, lemon juice, salt & pepper and mix for 3 seconds on Speed 4.

  2. Pour over chicken.  You can marinate for a while or grill immediately, depending on how much time you have.

  3. Grill the chicken on the BBQ or in a pan, until lovely and golden brown.

  4. Dressing
  5. Place lime zest in TMX bowl and chop for 5 seconds on Speed 8.
  6. Add garlic, ginger and chilli and chop for further 5 seconds on Speed 8.

  7.  Add coriander, chop for 3 seconds on Speed 5.

  8. Add yoghurt, mayonnaise, fish sauce, sugar, tumeric and lime juice.  Mix for 5 seconds on Speed 4.

  9. Salad
  10. Place chicken in a large serving bowl with all the salad ingredients.  Pour dressing over and mix through.  Garnish with pine nuts.

Tip

To bulk the salad out a little more, you could add some steamed cous cous or a couple of chat potatoes which have been halved and boiled/roasted/steamed.

    Not something I would normally try, but I have a overload of lemons so searched lemon recipes. Glad I took a punt because it's delicious! Will be a perfect refreshing summer salad too.

    Even after all the comments I still didn't imagine how delicious this would be. A BIG hit with my family. I don't eat meat so used some of the marinade to marinate my fish & the rest of the family had chicken (700g). I used mixed spinach & rocket, then shredded 3 kale leaves, carrot, cucumber, red caps. The dressing was so tasty & it made a big platter of salad. Added quinoa cooked in a little stock too. Will def be making this over & over. Thanks for the great recipe & sorry for the detail..its just for me to remember what I added.

    Made this for tonight's dinner and it was a huge success. Bulked it up with some cous cous. Didn't have any fish sauce so substituted soy sauce and forgot the turmeric, but still delicious. Will definitely be making this again.

Reminds us why we love our Thermies when you can make a marinade while sweeping the floors, then send Hubby to the BBQ to do the chicken, and make the salad dressing while mopping the floors. And all in one bowl. Dressing was divine, Hubby said 'ammmmmmmmmmmmmazing'. On high rotation in this house now
