Kerry's Swirled Fruit Loaf

Ingredients

Fruit Paste

  • 200 grams Sultantas
  • 1 teaspoon ground cinamon
  • 1 teaspoon nutmeg ground
  • 50 grams alcohol (any type), I used Sherry this time

Dough

  • 300 grams water, luke warm
  • 1.5 tablespoons dried yeast
  • 600 grams bakers flour
  • 1 teaspoon salt
  • 1 heaped tablespoon powdered milk
  • 2 teaspoons Bread Improver (Optional)
  • 65 grams brown sugar
  • 50 grams Butter

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Fruit Paste
  1. Place all ingredients in TM Bowl Blend 10 seconds Speed 9

    Cook 5 mins 80degrees speed 2 Reverse Stir

    Place into bowl set aside

  2. Dough
  3. Pre heat oven to 200 degrees celcius

    Without Cleaning bowl add water and yeast 30sec speed 5

    Add all other ingredients in order listed mix 1 min speed 3

    then dough mode 6 minutes

    Place on Thermomat to prove for around 30 minutes

    knock down and flatten to a rectangle the length of your bread tin

    spread paste evenly over rectangle and roll as for a scroll place in tin seam side doen and prove in a warm place until doubled in size

    Bake for approx 30 minutes or until golden and sounding hollow when tapped

    remove from tin to a wire rack to cool slightly mif serving warm or until cold store in airtight container

    also freezes well

Tip

Can also be made into a bun loaf by either making a series of scrolls cooked in a round shape or a damper type shape to bake after shaping into a loaf
