- 1 heaped tbsp honey
- 3 heaped tbsp butter (about 90gms)
- 130 g self raising flour, (1 cup)
- 1 egg
- 50 g -100gm raw sugar, to taste, (2/3 cup)
- 50 g desicated coconut, (2/3 to 3/4 cup)
- 140 g mixed dried fruit (see tip), (1 cup)

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Pre-heat oven to 180 C.
Line a slice tray with baking paper. Set aside. - Place honey and butter into mixing bowl and cook 3 min/50 C/speed 3.
- Add the rest of the ingredients, except dried fruit, and mix 20 sec/speed 4 - 5.
- Add fruit and mix 10 - 20 sec/Reverse/speed 3 until combined.
- Wet hands and spread slice mix onto tray, pressing down where necessary to compact.
Bake for 20 minutes only. - Leave in tray to cool and then slice into approx. 5cm squares, or as desired.
Slice will continue to harden as it cools.

Tip
Any dried fruit (e.g. craisins, sultanas, mixed fruit, apricots, dried peel), nuts (e.g. almonds), grated vegetables (e.g. zucchini) or museli mix can be used for this slice. Whatever is in the cupboard and your imagination are the only limits!

Really enjoyed this slice - made mine with dates, dried figs and sultanas. Didn't think of adding walnuts as another person did but will try this out next time. Found it a bit thin (in my slice tin) so will either use a square tin next time or increase to 1.5 times.

Thank you. This is great. I just used sultanas. Cooked, sliced, wrapped in individual pieces and put in the freezer for school lunches.

Delicious. followed advice of others and made 11/2 quantity and it filled beautifully in the lamington tray. I only used 80g sugar and this was sweet enough. I added 4 dates and the rest in sultanas Also added 60 g walnuts. Will make this many times. Thank you.

Used craisins and chocolate chips in my version. It was an ok slice. Had to pour mine into tin. No need to wet hands. Was a little dry by the next day. Will try and different version next time And maybe freeze?

Love this tried and true
Love this tried and true favourite! Very quick. Have made it every 1-2 months for over a year now. We have a hot oven and find it's golden/done between 12-16 mins. We always make a double-batch (although still put it in two trays), reduce the sugar and substitute pumpkin & sunflower seeds to the dried fruit. So great with a cuppa. Thanks for posting!

This is a delicious slice. I
This is a delicious slice. I like the simple ingredients, nothing that wouldn't generally be in my cupboard/fridge at any given time. Also like the versatility of adding any fruit/nut, good to get rid of those bits and pieces that are nearing the stale stage. I used Almonds, Sunflower Seeds, and Dried; Paw Paw, Apricot and Pineapple.
I made a single batch and based on the comments used a loaf tin rather than a slice. It did work out well but took about 35mins in my oven due to the thickness.

I had no coconut the other day so added oats instead. Still great.

You really need to push it
You really need to push it out to get it to the edges of a tin, and it is only about 1cm thick when cooked, but I'd love to read how you go doubling the recipe as I've never actually tried.

I made it today with
I made it today with sultanas, sunflower seeds and sesame seeds as the "fruit" and it was very nice. I think if I made it again I would make 1.5x or 2x the amount as I didn't have enough to cover the base of the lamington tin I was using.

We rarely get to freeze ours, but I do when making a batch to share with a batchelor in our family...sounds yummy! and good thinking!!

I made this using gluten free
I made this using gluten free self raising flour and it worked really well. Really tasty, held together well. And a tasty tip (as gluten free baking often goes crumbly realtively quickly) - I froze the remaining slice, then ate some later straight from the freezer - it was firm (not hard) and really beautifully chewy, just like nougat consistency - delicious!!

Just made 2 batches of this!
Just made 2 batches of this! One with a heap of nuts and seeds, dates etc, and one with mashed banana and dates. Neither with sugar. Both delicious, both worked a treat and how EASY was it!! Afternoon tea done in less than 5 minutes - gotta love that!

In order to reduce the sugar
In order to reduce the sugar quantity, I added an over ripe banana and a generous handful of dates (which I pre-chopped in the TM) and as my family dislike sultanas, craisins etc., I added a 'nibble mix' of cashews, almonds, sunflower seeds and pepitas.
It is absolutely delicious and they have just about finished it ... just as well I put a few slices aside for their lunches tomorrow !
