Sticky Date Cheesecake

  • 20 grams Butter
  • 100 grams Butternut Snap biscuits broken
  • 375 grams Softened Cream Cheese
  • 65 grams caster sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2 teaspoons plain flour
  • 130 grams Dried pitted dates

Caramel Sauce

  • 250 grams cream
  • 200 grams brown sugar
  • 130 grams Butter
  • cream, extra, to serve

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Base
  1. Combine broken biscuits and butter for 10 seconds on Speed 7. Press mixture into the base of the prepared tin. Chill for 30min
  2. Sticky Date Cheesecake
  3. Pre-heat oven at 160 degrees
  4. Chop dates for 5 seconds on Speed 7. Set aside
  5. Mix cream cheese, sugar and vanilla for 10 seconds at Speed 5
  6. Add egg and flour. Combine for 5 seconds at Speed 4. Scrape sides of bowl
  7. Add chopped dates. Mix for 5 seconds on Reverse at Speed 4.
  8. Pour filling onto prepared base. Bake for 25 minutes or until just set. Cool in the oven with the door ajar. Chill
  9. Caramel Sauce
  10. Place cream, sugar and butter into bowl and cook for 5 minutes at 80 degrees on Speed 4, or until thickened.

    Cut the cheesecake into thick slices, approx 2- 3 cms. Place onto serving plates. Drizzle with sauce, and serve with a dollop of cream.

Tip

This is very rich. Serve as smaller portions rather than bigger.

Also great without sauce, cut into 3 cm squares, for afternoon tea.

    This recipe is delicious but very rich. We preferred it without the sauce but with some berries and ice cream it was marvellous!
