Ingredients

10 slice(s)

  • 180 grams pitted dates
  • 1 teaspoon bicarbonate of soda
  • 250 grams Boiling water
  • 110 grams raw sugar
  • 30 grams Butter, at room temperature
  • 1 egg, lightly beaten
  • 220 grams Self Raising Flour
  • 1/2 teaspoon sea salt

Recipe's preparation

  1. Place pitted dates, bicarbonate of soda and boiling water in TM bowl. Cook for 2 mins/100 C/speed soft Gentle stir setting.

    2.   Add raw sugar and butter.  Mix for 7 secs/Speed 6.

    3.   Turn to Speed 3 and while TM is running add lightly beaten egg and mix for 4 secs.

    4.   Add self raising flour and salt and mix for 10 secs/Speed 8.

    5.   Pour mixture into prepared loaf tin and bake at 180 degrees for 35-40 mins.

Tip

Remember to get all mixture out of TM bowl, first spatula out as much as you can, then put the lid back on and whizz it up to Speed 8, any mixture left on the blades will splay out to the side.  You can then spatula this out into the tin.

    Delicious. So easy. Did add butter with dates and hot water by mistake and only added 50 grams sugar. But super easy. Will make again that's for sure! Thanks for the recipe.

    Yum yum yum! Really good date loaf, love texture and the taste. Only changes I made were to increase dates to 200g and used 90g white sugar because I didn't have raw sugar.

    Very nice loaf!! I loved how it was using simple pantry items. I also subbed the butter with 40g coconut oil and it turned out great. I only added 80g sugar since dates are already sweet and it tasted fine (coming from a sugar-holic). I also added 1/2 tsp ground ginger and 1/2 tsp ground cinnamon but could barely taste it so many 1 tsp each next time? Thanks for the tip as well! That’s a great one Big Smile

    Delicious, moist loaf. Easy to make with basic ingredients. Definitely worth 5 stars. As suggested by others I reduced the sugar. Looking forward to making a sauce as suggested in comments to make it into a Sticky Date Pudding.

    Best recipe! I love chunks of dates so set the date/water/bicarb mix aside after step 1 and add back in at step 4 but only mix on speed 4. Also use 220g dates and reduce sugar to 50g.

    Yumm! Made a loaf this morning, i put 4 slices away for kids lunches and the rest is gone!! I only had 1 peice! So just made another one. I used honey instead of sugar and upped the dates to 220grams.

    I have to say, this is my favourite baking outcome so far with my thermomix. I subbed in jaggery (the indian block sugar) and it still tasted great. Next time I'm going to try GF flour as well.

    I made this at 11pm so was wanting a quick result, I cooked it in a square cake tin and it was cooked in 12 minutes! Happy days! Also I find squares of cut cake easier to pack  in the lunch box than a slice.  I used coconut sugar instead of the raw.
