Vanilla bean icecream (without the vanilla bean!)

  • 2 eggs
  • 480 grams cream
  • 250 grams Milk
  • 175 grams white sugar
  • 2 level teaspoon Vanilla bean Paste, or a mixture of vanilla paste and vanilla extract

Recipe's preparation

  1. Put all ingredients in bowl of thermomix and cook for 7 minutes on Speed 4 at 80 degrees. Chill overnight (or for at least 4 hours) in fridge or over ice bath until well chilled, then freeze in icecream maker according to manufacturers instructions. Alternatively, freeze for 4 hours or until firm but not fully frozen, then cut up into pieces and place back in thermomix bowl and mix for 20 seconds on speed 9 and then for 15 seconds on speed 4, using spatula to fell.  Put back in freezer to finish freezing

Tip

You can use all vanilla extract if you like, but it doesn't have those lovely vanilla seeds in.. I am basically lazy, and when i saw vanilla paste in the supermarket, complete with all those lovely little seeds) i was delighted, and saw an easy way to incorporate that sumptuous flavour into sweet tarts and, of course, icecream.


This is a variation on Ben and Jerry's French vanilla icecream, from their homemade icecream and dessert book.

    - I subbed out white sugar for coconut (100g)
    - User a combo of vanilla paste and essence.
    - I'm also going to add in some broken up violet crumble once first freeze and re-blend has been done.

    Great recipe. Love that it uses the whole eggs and only two at that. Easier option than the BCB. Reduced sugar to 150g. Still very sweet for us so will drop again next time.

    Love that the recipe uses full eggs. I added used 90g of coconut sugar and 45g of maple syrup and a large pinch of salt. Only used 1 tsp of vanilla extract. Just cooling in the freezer now.

    I also used about 770g of cream/milk all up. About 550g of thickend cream and 220g of full cream milk.

    Great recipe, I change it up a little sometimes by adding block of chocolate to base mix, finely milled, or chunking picnic bars and adding when partially frozen ( ice cream maker) or second blitz if using thermie. So good to know only purest ingredients in it. Gotta stop eating it or will blow out yo size of house

    Delicious icecream! Very creamy and smooth. I churned mine in an icecream maker. A bit too sweet though for my taste. Will definitely make again but reduce the sugar next batch.

    Fantastic Icecream, easy to make and best of all you know exactly whats gone into it, will never buy icecream again Big Smile I reduced the sugar to 135g based on another comment (i do not have a sweet tooth) and still I find it too sweet so would reduce sugar again the next time I make it. PS kids dont see a problem with it being sweet lol. Thanks for sharing.

    Hi.  Just in response to your ice cream being a little on the icy side it is to do with how long it takes to cool down the hot mixture.  It is best to get the mixture to cool to 4C within 90 minutes.  It is best to do as suggested in the recipe notes to cool it quickly in an ice bath.  Either pop the mixture into a zip lock bacg and into icy water or a bowl sitting in the icy water. Hope that helps tmrc_emoticons.)

    This is a smooth and creamy Icecream. Very quick to make and really yummy. I left it in the freezer overnight before chopping up and doing the second spin in the TM.Think I should have processed it a little longer as just a little bit icy.However doesn't detract from the taste.Will be sure to be making this again.

    Wow, this must be a well kept secret with so few ratings!  This is exactly what I hope for every time I try pricey vanilla ice cream.  It is freaking, delectably, PERFECT!  I LOVE this!  I was ranting around the house like a crazy woman, saying I had *made* icecream and not only that, it was the best ice cream ever!!  Okay, enough ranting now, but I highly, highly recommend this recipe.  Delicious.

    i love this recipe tmrc_emoticons.) really easy and tastes great.  Wasnt quite firm after 4 hours so accidentally left in freezer overnight but after about 15 mins on the benchwas able to cut and mix in thermie. Will make again and also use as a base for other flavours thank you! Love Big Smile
