Thermie Green Vegetarian Curry

Ingredients

6 portion(s)

Curry

  • 1 onion quarted
  • 1 garlic clove
  • ginger, approx 2cm
  • 1 bunch corriander, including roots
  • 1 tablespoon TM vegie stock concentrate
  • 3 big green chillis, with or without seeds depending how spicy you like it
  • 1 tablespoon peanut oil
  • 1 tablespoon fish sauce, optional- leave out for vegetarian guests
  • 1 heaped teaspoon ground cumin
  • 1 heaped teaspoon ground corrinader
  • 3 fresh or frozen kaffir lime leaves
  • 600 grams sweet potato, pumpkin, carrot or potato, 2cm cubed -use any or a combination of all of these vegetables
  • 400 grams light organic coconut cream
  • 400 grams zuchini, brocolli, peas or snow peas, cut into chunks-use any or a combination of all of these vegetables or other favourites you may have
  • 400 gram Chickpeas, drained & Rinsed (one tin)
  • 100 grams spinach leaves, fresh

Recipe's preparation

    Thermie Green Vegetarian Curry
  1. Put onion, garlic, ginger, coriander, tm stock and chillies in the TM bowl chop for 15 sec speed 8, scrape down sides of bowl.

    Add , peanut oil, fish sauce and ground corriander & cumin and cook for 4 min 100 degrees speed 1.

    Add kaffir lime leaves, coconut cream & 600g hard vegetables to TM bowl.

    Place spinach leaves into the thermoserver.

    Add the rest of the soft green vegetables place into the Varoma -zucchini & broccoli on the bottom & snow peas & peas on the top tray.

    Cook for 15 minsCounter-clockwise operation Varoma temp speed 1. Check vegetables if any of the steamed vegetables are cooked remove & place into the thermosever.

    Add chickpeas to TM bowl & cook for an extra 5 mins Counter-clockwise operation Varoma speed 1 only if vegetables need to be cooked further.

    Add to the thermoserver & stir through the spinach.

    Serve with coconut rice or jasmine rice.

Tip

You can add chicken or seafood in place of some of the vegetables if you wish.

    Just starting on the vegetarian cooking and this was fabulous. I used red chillies, broccolini, bought vegetable stock powder and totally forgot the fresh coriander but my husband and I totally loved this recipe. Will most certainly be doing it again !!

    It'll depend on what vegetables you choose to use. The hard veg (pumpkin, sweet potato, carrot etc) will be fine, it'll be your soft veg that will make a difference. For example, green beans, broccoli, peas etc freeze well so I'd use those - I'd avoid vegetables that can get a bit slimey when defrosted, like snow peas and capsicum.

    Great recipe. I used sweet potato & carrot as the hard veg, the carrot stayed whole but the sweet potato turned into sauce during the cooking process but it was delicious that way, turned it into a really thick hearty winter curry. I served with cauli-rice.

    Really loved this! So easy & veges were cooked perfectly. 

    I used 2 red chillies but I would love even a bit more spice, I like it hot. I put eggplant, sweet potato, carrot & red capsicum into bowl & cauli, green beans & more red capsicum in varoma. Spinach leaves in thermo server added more veges. 15mins was perfect.. Only the eggplant mushed, next time I'll add it half way. Loved the chickpeas in it too, only mixed through for 2 mins. Added basil instead of coriander cause my family don't like it.

    I served with brown rice & its even better day after! I had it for lunch for a few days as it makes a good amount. 

     Thanks for a simple, tasty curry.

Ive started a new diet and use specific vegetables including, but not always using; mushrooms, carrots, cauliflower,green beans, broccoli  basically all with low carb veg. Favourite meal by miles so far (keeping in mind i like spice and curry like meals)

     I have made it twice this week once for the family and once for a friend. I made it as the recipe states except with only one red chilli each time and I tried it with chicken the 2nd time! Fabulous both times! the bunch of coriander just makes this dish!

    Made this last night! This turned out beautiful except I think I needed the fresh coriander (which I left out) and possibly extra chilli. Can’t wait to make this again!

    Oh and also the coconut rice really made it extra special.

    Fabulous recipe. Vegetarian teens were so impressed. I used green beans instead of spinach, two red birdseye chillis, and left out the corriander. Thermosever was especially useful for holding curry whilst rice cooked.

    This is amazing ... A regular dish in our house - great way to use up veg that seems like bits and pieces.

    on one occasion I didn't have coconut milk/cream -substituted for milk instead... Still worked fine.

    Thanks for this delicious recipe! Much tastier than most vegetarian curries I've tried. Unfortunately I didn't have any kaffir lime leaves, but it was still great without them. Cooking time for the hard vegies was definitely more like 20+ minutes in my TM31, but that's no big deal. I'm trying to cook at least two meat-free meals per week; this will be a good addition to my list of meat-free options.
