Ingredients

Pumpkin and feta dip

  • 130 grams cooked pumpkin
  • 1 cooked carrot
  • 60 grams ground almonds
  • 40 grams raw cashews
  • 1/2 clove garlic
  • 40 grams firm feta
  • to taste Salt and pepper
  • sprig Parsely

Recipe's preparation

    Pumpkin and feta dip
  1. Place all ingredients into mixing bowl and pulse for 2-4 seconds until desired consistency is achieved.

    This was lovely thanks.  I roasted the veg before hand and also added a 1/4  of a capsicum and swapped the parsely for corriander as it was all I had on hand.  Just turboed them all up 3 or 4 times.  Yummo

    This has great flavours! I roasted the pumpkin to bring out more flavour in it. Next time i wouldnt use ground almonds, but whizz whole almonds with the dip to add more texture to it.Everyone loved it though and have been asked for the recipe multiple times!

    You could roast the pumpkin and carrot if desired - that would add another dimension to the flavour, any cooked pumpkin is ok, just make sure it is drained and cooled. tmrc_emoticons.8)
