"Clean" Anzac Biscuits

Ingredients

  • 5 heaped tablespoon coconut oil
  • 2 tbsp Rice malt syrup
  • 1/2 tsp baking powder
  • 1 tsp water
  • 100 g Almond Meal or Coconut Flour
  • 100 g rolled oats
  • 3 tbsp Natvia or sweetener of choice
  • 50 g Desiccated Coconut
  • 2 tbsp water

Recipe's preparation

    Preheat Oven to 160 degrees, Line Baking Trays x 2
  1. Place Coconut Oil and Rice Malt Syrup in TM Bowl.  Heat for 2 mins, 60 deg, Speed 2 or until fully dissolved.

    Add Baking and mix for 5 secs, Speed 3.

    Add remaining ingredients, Closed Lid, 40 secs, Interval Speed.

  2. Place one tablespoon of mixture at a time onto lined tray and flatten only slightly, leaving a space for spreading.

    Bake for 15 mins, remove, press down to flatten and bake for further 5-10mins or until lighlty golden brown.

    Allow to Cool for 5 mins, then transfer to a wire rack to cool completely and harden up. Store in fridge.

    These were really good.  I used coconut flour which meant I had to cook them for longer.
