Gordon Ramsay's Chocolate Fondant - Thermomix Style!

Ingredients

10 portion(s)

Chocolate Fondant

  • 50 grams Butter, melted
  • cocoa powder, for dusting moulds
  • 200 grams dark chocolate (70%), chopped into small pieces
  • 200 grams Butter
  • 200 grams raw sugar
  • 4 eggs
  • 4 egg yolks
  • 200 grams plain flour
  • Creamy Traditional Ice-cream, from EDC

Recipe's preparation

    Chocolate Fondants
  1. Preheat your oven to 200 degrees.

    Prepare your 8 – 10 molds / ramekins by coating with melted butter and dusting well with cocoa powder.

    Grate the dark chocolate for 5 – 10 seconds on speed 8. Add butter and melt for 2 minutes at 60 degrees on speed 3 or until fully melted and incorporated. Set this chocolate mixture aside and clean the bowl.

    Mill raw sugar to caster sugar for 3 seconds on speed 9. Insert butterfly and add eggs and egg yolks. Mix for 40 – 60 seconds on speed 4 or until mixture is pale and thick. Sift the flour into the eggs and mix to incorporate for 10 seconds on speed 4.

    With the butterfly still inserted and on speed 4, pour the melted chocolate into the egg until all the chocolate is added and the mixture is completely combined.

    Divide the fondant mix between your ramekins / moulds. Chill for 20 mins before cooking.

    Place the fondants on a baking tray, and cook for 10-12 mins until the tops have formed a crust and they are starting to come away from the sides of their moulds. Remove from the oven, and rest for 1 min before turning out.

Tip

Cooking time will vary depending on the size of the fondants and individual ovens. I use the crust as a guide but always do a test fondant, to check that they are well enough cooked but still gooey on the inside!

The fondants can be frozen for up to a month and cooked from frozen. Chill for at least 20 mins or up to the night before. To bake from frozen, simply carry on as stated, adding 5 mins more to the cooking time.

    So good! I used 8 mugs as I didn’t have ramikins and they worked fine. I also scaled back the sugar to 150g as I don’t like too sweet. Cooked for 12 minutes and they were perfect.

    I decided to use this recipe rather than my other trusty recipe that I've used plenty as I'm yet to try it in the thermomix. Well they took forever to cook. When I pulled them out at 10, 12, 15, 18 and 20 mins they weren't anywhere near cooked (slight crust but very runny). I left them for another few mins and finally at 25 mins they had developed a thick crust. But despite me following the instructions and greasing them they were all stuck. I've never had this in my other recipe which says to rub hard butter on ramekins then dust with cocoa, they slide straight out. I wasnt happy with the end result. Will be converting my recipe.

    Oh my. These are outrageously good. Gooey and beautiful. Very rich. Follow the instructions to a T, and it will work out. (I have a dodgy oven so needed to extend it to 14 mins but apart from that). The extras I made and popped out of the fridge the following day needed a little more too (say about 16 mins - but again dody oven dude here!). Would definitely make again.  Big Smile

    Absolutely delicious. I made them in large silicone muffins, but next time will try making smaller ones as they are quite rich. Was amazed at all the gooey, oozing chocolate - got the thumbs up from everyone. Better than the ones we had in a restaurant last month.

    Wow. Made these for valentine's day dinner and they turned out to be the highlight! What I always perceived to be a sophisticated dessert was made easy peasy thanks to this great recipe and the thermomix. Definitely a keeper! They were just perfect - even the timing was an absolute spot on for me.

    Tips : 1. Use the very best chocolate you can get your hands on - nothing less than 70% 2. I used brown sugar and that was totally fine. 3. I halved the recipe and that worked too - yielded 5 ramekins.
