Lime and Lemongrass Chicken
- 6 slices ginger
- 6 Kaffir lime leaves
- 4 stalks lemongrass, trimmed, white part only
- 1 long red chillies, trimmed
- 20 g vegetable oil
- 600 g chicken, cubed
- 400 g coconut milk
- 2 tbsp fish sauce
- 1 lime, juiced
- coriander leaves, to serve

Recipe's preparation
Place the ginger, lime leaves, lemongrass and chilli in TM bowl. Process on Speed 7 for 5-10 secs.
Add oil and saute 3 mins at 100 degrees C on Speed 1.
Add the coconut milk and cook for 10 minutes at 100 degrees C on Speed 1.
Add the chicken, fish sauce and lime juice and cook for 15 minutes at 100 degrees C on Reverse/Speed 1.
Add chopped coriander leaves and serve with steamed vegetables rice.

This was delicious. I used 2 X 270g cans of Ayam coconut milk and one of coconut cream. I swapped the vegetable oil for coconut oil, also swapped the fish sauce for soy. Used 800g chicken breast. Thickened after cooking with cornflour & cooked another 2 mins.
i think I would add another red chilli as it had no heat.

Delicious weeknight dinner! A winner for my husband and me, served in a bowl over steamed brown rice. We enjoyed the soupy consistency and wouldn't want to thicken it. Modifications:
1 garlic clove + 1 purple shallot mixed in with lemongrass etc.
Coconut oil instead of vegetable oil
1 teaspoon brown sugar added with fish sauce and lime.
500g chicken thigh fillets
Used 200ml coconut cream and water
Added capsicum, zucchini and bok choy.
I used the rind of one lime
I used the rind of one lime as I didn't have any Kaffir lime leaves, used only 2 lemongrass stalks although I'm pretty sure I use more of the stalk than you are supposed to, swapped out the vegetable oil for coconut oil, used coconut cream as thats all I had and added some peas for colour. Absolutely loved it!!

Magnificent. Everyone loved this. I doubled the recipe added garlic and small amount of sugar (but unnecessary I think). I also used breast and cut into bite size cubes and they held together well.

Needs veggies and less lemongrass for my taste. Nonetheless, great recipe just minor changes to your liking.

We really enjoyed this!The sauce was a little thin - so I added some desicated coconut which helped. Also added some steamed zucchini, capsicum and snow peas and mixed in ("Counter-clockwise operation" "Gentle stir setting" 10 seconds or so). Oversteamed the veg a bit (did those on stovetop in a steamer basket - got a bit too involved in the show I was watching :P )Still an awesome easy recipe and will be adding it to my regular list!

I made this last night- Added about a teaspoon of brown sugar- it was very soupey- but loved it! the flavours were awesome. I might try to half the coconut milk and replace with 250g lite sour cream to make it more healthy and perhaps thicker.

This is now one of our favorite dishes. The first time I made it I found it shredded the chicken so this time put the chicken on the bbq and coated it with garlic olive oil and honey. I then cut into cubes and added as directed but for only half the time as it was already cooked. I also added beans and potato to give it some body. Now very yum

I agree Kylie, I cut my chicken thighs into quarters never a problem, as long as blades go in reverse, speed soft or 1. I wonder if people forget to reverse their blades. Also the taste is amazing as is, with a litle garlic. I also wonder if people are putting in teaspoons of fish sauce instead of tablespoons! Regards Anne

You could try chopping your chicken into 2-3cm cubes. I make a lot of curries and don't find it a problem.

Loved this dish, had penty of flavour however I did put in two small hot chillies. I also used cooked chicken thighs but they still aborbed the flavour of the sauce. No added sugar or thickening was needed. Served with brown rice and steamed carrots and zucchini. Family loved it.
Just made this! Used all the
Just made this! Used all the advice from above! Yes it was a little bland but just needed a few adjustments ...and now is totally wow. I added 1 large tbls of lemongrass paste,ginger paste and it still was missing something so i added 2 tbls of wok spice paste( goumet garden tube- garlic ginger chilli shallots) then it neded a sweet element so i added 1 tbls of palm sugar and the lime zest! Make sure u test the sauce before u put your chicken in!

This was probably my favourite recipe so far. My husband has been a very big Thermomix critic after not being so happy about the financial outlay but even he agreed this was an amazing dish. When I made this there was no lemon grass left in supermarket, so I used the squeeze tube type. You discard all the tough outside leaves (the green bits) of the lemongrass stalk and only use the soft white interior. This isn't stringy. I didn't thicken mine because we had it with rice, and leftover sauce added to leftover rice for my lunch the next day with some cooked veg. I already had. Anne

I thought it was rather tasty but I also think I added slightly more lemon grass than was suggested. My question is does anyones elses lemongrass go string when they blitz it, I never get a smooth consistency with lemongrass. That would be my only fault with the dish, the texture of the lemongrass. I also cut my chicken into larger chunks and so remained whole.

This is the most tasteless curry I have EVER made and eaten. Made to the recipe it has zero flavour, do not make it unless you add flavour!!

Just tried this and found it to be terrible (sorry). My chicken was totally shredded (yes, I had TM in reverse). The flavours had potential but the sauce was generally bland, runny, chicken shredded and dry. My whole family was in agreeance that it was pretty horrible and have begged me never to make it again.

really enjoyed this dish but thought it was missing the sweet flavour of a Thai curry so recommend adding 30 gm palm sugar!
