Ingredients

Chicken & Broccoli Fettuccine

  • 400 grams chicken breast or thigh, Diced/Cubed about 3cms
  • 3 Rashers of Bacon, Chopped to your liking
  • 1 onion, Cut in quarters
  • 3 cloves garlic peeled
  • 100 grams mushrooms, Roughly chopped or sliced
  • 1 head Broccoli, Chopped to your liking
  • 30 grams Butter, Chopped roughly
  • 2 tablespoons Corn Flour
  • 1 MC of cream, Any cream is ok
  • 200 grams water
  • 40 grams Veg Stock Concentrate, (see recipe in EDC)...I use 60g for a fuller flavour

Fettuccine or spagetti of choice

  • fettuccine pasta, Cook as per packet instructions on stove

Recipe's preparation

  1. Fill pot with water and boil on stove. Add pasta when ready as per instructions on the packet

  2. Add onions and garlic to TM and chop for 2-3 seconds on speed 7

  3. Scrape down sides of bowl with spatula and add bacon and butter to TM bowl and saute for 6 minutes, 100c, on speed 1

  4. Dice/cube chicken breasts and toss in a plastic bag with cornflour until well coated.

  5. Add chicken, veg stock concentrate, water and mushrooms and cook for 15 minutes, 100c, speed 1, counter-clockwise operation  Reverse Speed

  6. cut broccoli into pieces (flowers) and add to chicken when there is 6mins remaining (of cooking time above)

  7. Add cream through hole in the lid during the last 3 mins and let sit for 5 minutes

  8. You can drain pasta and mix the pasta and sauce together or plate up with pasta down the bottom and spoon the Chicken and Brocolli sauce over the top.

    Great easy meal even my grandson 15mths old loved it. I used the 60g vege stock paste and had it over Sprial Rice Pasta. A definite favourite thanks for the recipe.

    A definite winner in our household!  I added an extra rasher of bacon, omitted the mushrooms (no one likes them except me) and did 40g of TM Veggie Stock as well as 20g TM Chicken Stock - delicious!  Definitely on my make it again list!

    This was very nice, however, as has been suggested I would add extra TM veg. stock next time as it was a little lacking in flavour. I might also thicken it just a little next time with a bit of cornflour and water. Other than that, this was a good recipe.

    Tasted lovely but recipe needs clarification...Thankfully I realised (after about 5 mins of cooking) that the 200g water should have been added in step 4.  Recipe not as easy to follow as TM Recipes using the symbols...but it was ok.

    This was a winner with Master 5 & Miss 4. I added the broccoli when I added the chicken in the hope it might be disintergrated at the end to hide from the kids. I also added 2 frozen cubes of spinach, frozen peas & frozen corn with the chicken. I added 2mcs of water & 1 mc of white wine with the stock concentrate.
