Chicken & Chorizo Arrabbiata Risotto

Ingredients

6 portion(s)

  • 50 g Parmesan cheese, cubed
  • 1 onion, peeled and halved
  • 3 cloves garlic, peeled
  • handful flat leafed parsley
  • 50 g olive oil
  • 2 Chorizo sausages (about 250g), cut lengthways, then sliced
  • 320 g arborio rice
  • 100 g white wine
  • 400 g Tinned Diced Tomatoes
  • 1/2 tsp chilli flakes
  • 1/2 tsp Oregano, (dried)
  • pinch sea salt and cracked black pepper
  • 300 g chicken thighs, diced
  • 2 tbsp TM vege stock concentrate
  • 250 g water, (or whatever takes you to the fill line)
  • 5 mushrooms, halved and sliced
  • 40 g pitted kalamatta olives, halved

Recipe's preparation

    Method
  1. Place the parmesan into the TM bowl and pulverise for 10 seconds/speed 9.  Set aside.

     

  2. Place onion, garlic and parsley in bowl and chop 3 sec/speed 6.

  3. Add oil and chorizo and sauté for 2 min/100C/ReverseCounter-clockwise operation/speed 1 with MC off.

  4. Insert Butterfly.  Add rice and wine into bowl and sauté for 2 min/100C/ReverseCounter-clockwise operation/speed softGentle stir setting

  5. Add diced tomatoeschickenchillioreganosalt and pepper and simmer 8min/100C/ReverseCounter-clockwise operation/speed softGentle stir setting

     

  6. Add stockwatermushrooms and olives and cook for 10 min/ 100C/ReverseCounter-clockwise operation/speed softGentle stir setting

  7. Pour into Thermo Server, stir through parmesan and allow to sit for 5min.

    I was skeptical of the taste combinations in this recipe, but it'd received so many positive reviews, I pushed ahead and it's fabulous. I'm a big fan of one dish tasty recipes and this hits the mark with a bulls eye, even huspain loved it.Smile

    Lots of flavour and really nice! I didn't have chorizo so fried up some bacon and leftover shredded charcoal chicken and added it at the end and used zucchini instead of the mushrooms and was perfect. I also halved the oil and cooked for an extra 3 mins. Will be making again.

    Full of flavour. Next time I will use less chilli flakes as I personally found it a tad spicy for me. I didn't add olives because my family dislike them so added more mushrooms. I didn't have any wine so used more stock liquid. This recipe is highly recommended and will be in my favourites. The chorizo sausage is a must. Yum!

    This was super yum!! Just pan fried the chorizo so it was nice and cripy then added some shredded chicken to the cooking chorizo then to the risotto when it was in the thermoserver

    Absolutely delicious!!  I am still a Thermie newbie but have made this twice already, the flavours are amazing and it makes a lot.  I followed the suggestion of frying the chorizo first just to elminate some of the oil but apart from that, followed the recipe exactly with an extra minute or two cooking time.  Will be a regular in our house tmrc_emoticons.-)

    I made this last night for dinner and both husband and I LOVED it! Soooo tasty, didnt have mushies so used capsicum instead which went really well with the flavours! Also used prawns instead of chicken and it was just DELICIOUS. I'm new to the thermomix so still getting used to how it works and this was a nice easy recipe to follow but next time round will be even easier and quicker for me. Will definately make again!

    We put in 500g chicken thighs and 375g chorizo which just fits into the TM5 and we added less water but filled the tm5 to the fill line 150g?  We didn't have any mushrooms.  It was great--the kids love it and we have enough for another dinner.. Love

    I fried the chorizo in a frypan and drain the excess oil to make it nice and crispy, also once I finished the rice was slightly crunchy still. I cooked for a further 3 mins and was perfect. It's my first meal I've made in the thermie tmrc_emoticons.-)
