Chicken & Leek Risotto - Serves 2-4 people

Ingredients

You will need

  • 30 g Parmesan cheese
  • 1 clove garlic - peeled
  • 100 g Leek - the white part - washed
  • 30 g olive oil
  • 170 g Aborio Rice
  • 100 g white wine
  • 100 g Eye fillet Bacon, About 4 pieces - diced
  • 200 g Chicken Thigh - diced
  • 80 g butternut pumpkin - diced
  • 20 g Concentrated vegetable stock
  • 1 tsp salt
  • 400 g water
  • 2 handfuls of frozen peas

Recipe's preparation

  1. Place parmesan into TM Bowl.  Mill for 10 seconds / speed 9.  Set aside.  Clean Bowl.

    Place garlic in TM Bowl.  Mill for 3 seconds / speed 5.  Scrape down sides of bowl.  Add Leek (chopped in 5cm sections).  Chop 5 seconds / speed 5.  Scrape down sides of bowl.

    Add Olive Oil and saute for 3 mins / 100 degrees / speed 1.

    Add rice and wine.  Mix on reverse Counter-clockwise operation, 1.5 min / 100 degrees / speed 1.

    Add Bacon and Chicken.  Mix on reverse, 1.5 min / 100 degrees / speed 1.

    Add Pumpkin, Stock, Salt and Water.  Cook on reverse for 15 mins / 100 degrees / speed 1.

    Transfer risotto to Thermoserver.  Add Peas and Parmesan Cheese, stir through and allow to stand for 10 mins in Thermoserver.

Tip

If you have left over risotto - it makes an excellent basis or addition to soup the next day.  Just keep left overs in the fridge until you are ready to make the soup.

You must clean your bowl after the parmesan cheese to avoid getting a browned bottom to your bowl.  If you do get a browned bowl.  Just cut a lemon in quarters, place two quarters flesh side down in your bowl.  Use your Thermomix Cleaning Brush to push the lemons around the base of the bowl adding a little bit of pressure to release some juice of the lemon at the same time.  Leave it to sit for about 5-10 mins.  Remove the lemons and simply clean the bowl with a little dishwashing liquid, warm water and your Thermomix Cleaning Brush.  Repeat if necessary - your bowl will be sparkling clean.

    We really enjoyed this. I didn't have any leeks or parmesan cheese so I just used an onion and grated tasty cheese instead.  Will cook again.
