- 40 g parmesan, cubed
- 2 - 4 sprigs basil, leaves only
- 1 leek, medium size chopped into suitable sized chunks
- 2 cloves garlic
- 40 g oil
- 2 tomotoes, quartered
- 590 g water
- 300 g short grain rice
- 2-4 tablespoon vege stock, concentrate (or chicken stock)
- 1/4 teaspoon chilli powder
- 1/2 teaspoon turmeric
- 400 g sweet potato, cut into 2cm cubes
- 400 g chicken breast, diced

Recipe's preparation
Place parmesan into TM bowl and chop for 10 seconds on speed 9. Add basil leaves into TM bowl and chop for 3 - 5 seconds on speed 7. Set parmesan / basil mix aside.
Place leek and garlic in TM bowl and chop for 5 - 7 seconds on speed 7. Add oil and saute for 2 minutes, 100 degrees speed 1 with MC tilted sideways.
Add tomatoes and chop for 3 - 5 seconds on speed 3.
Insert butterfly.
Add water, chilli, turmeric, stock and sweet potato and cook for 5 mins at 100 degrees on reverse speed soft.
Add rice and chicken and cook for 19 minutes at 100 degrees on reverse speed soft.
Pour into thermoserve when finished and stir through the basil and parmesan then allow to rest for 5 minutes before serving.

This is one of my husbands favourites and until I got my TM the only way we ate it was if he cooked it cause I hated the preparation! Now of course its super easy with my TM. The recipe is converted from a Weight Watchers recipe (Pure Points cookbook). The recipe states that it serves 4 and that it provides 7 points for those familiar with the weight watchers points system.

This was delicious. The flavours were really good. Loved the hint of chilli. I added 2 tablespoons of stock as others had suggested. I also added a bunch of asparagus cut up into 3cm pieces. Will make again.

Sooo yummy. The first time I made it (using short grain brown rice) the rice was really undercooked so I ended up having to throw the whole thing out (didn't want overcooked chicken).
I tried it again but pre-cooked the rice for 10 min and it came out delicious! A bit too much water for my preference, it's more like a soup! But I'll add less water next time and I think this will be one of my favorites.

Very yummy! I had an onion instead of leek and put in some mixed spices instead of chilli and tumeric. I also didn't put the cheese in, but it tasted amazing!

I am so glad so many of you are enjoying this recipe! I have just edited the recipe since when I 'converted' it I was making my vege stock with half the salt content which is why I thought it needed 4 tbs but 2 tbs would be enough. Have also increased the parmesan content - when is there ever too much parmesan seriously!!!

Hubby and my 5yr old loved
Hubby and my 5yr old loved this, three yr old not so keen but ate with a little convincing. Was a tad dry but I used onion instead of leek as I was cooking from what was in the cupboard. I also used coriander instead of basil and no parmesan. Will definitely cook again esp as Master5 is generally fussier eater! But would prob add a tad more water.

I made this minus the leek (none in the fridge) and I used chicken stock instead of water, I think if the family could have they would have licked the bowl clean. Will be definitely be made again is our house!

This risotto has quickly
This risotto has quickly become a family favorite. We have a family of 6, including two teenage boys and it feeds all of us. I have added pumpkin when I didn't have enough sweet potato and it was really yummy! Thanks for the recipe

Loved this risotto! Very tasty. I particulary loved the parmesan basil mix to sprinkle over the risotto before serving. I'll be making it to go with other dishes but you may want to use 40grams of parmesan as the 20grams would not make enough. I also only used 2tbs of veggie stock concentrate and this was plenty. I will defo make this again.

this was yum! Thank you! I only used 2 tablespoons of the stock concentrate as I find it very salty otherwise and it was still very tasty. Will definitely be making it again! I found that it made enough for at least 5 (i got 4 meals out of it plus 5 mini meals for my 11 month old - he loved it too, chilli and all!). As for the weight watchers points, is it 7 pro points? (the new system?) or is it the old system - pre September 2010?

I used 1 small brown onion as I had no leeks & a tin of diced tomatoes as I had no tomatoes. I also used dried Basil since I had none fresh.
I also sprinkled in some salt & pepper to taste.
This was a hit & will now become my regular for nights when I'm either to slack or don't have lots of time to experiment with new dishes. Way better than the risotto reciped in EDCB.

Made this tonight for dinner. Hubby informed me he doesn't like risotto, but I made it anyway. I only used a sprinkle of chilli powder as he can't eat anything hot. And i used chicken stock powder in the water because I forgot I had liquid chicken stock to use. Anyway it was delicious. And hubby had 2 helpings, and said it was really nice, I could make it again! Winner!!
