Recipe's preparation
Peel and chop garlic on speed 6 for 1 second. Add olive oil, spices and fry for 2 mins on speed 1-2 at 100 degrees. Add rice, water, chicken stock and tomato and cook for 14 mins on speed 1-2 at 100 degrees on reverse. Add beans in the last 5 mins of cooking time and transfer to thermoserver. Season and keep warm.
Heat fry pan over medium heat whilst rice is cooking in thermomix and cook the chorizo for 5 mins or until golden brown. Transfer to top of rice with capsicum and coriander leaves and drizzle the oil from the chorizo pan over the dish.

Followed recipe exactly with exception being veggie stock instead of chicken.
Just like with a risotto any excess liquid absorbed into the rice on standing in the thermoserver. ❤️👍🏻

Then did the chorizo and marinated capsicum in the frypan. When it was cooked I combined it in a bigger pot, complete with the oil from cooking the chorizo. Everyone gobbled it up.

I didn't have the correct capsicum so just cut some up in the pan whilst I was cooking the Chorizo and poured all over once in the Thermosaver; also used Vegetable Stock with the "750 Gram" water swapped out for campbells chicken salt - will be doing this one again

I've made this a couple times
I've made this a couple times and it is enjoyed by my family. We like our spice so I add a little chilli with spices. With the extra water from the tomatoes it is a bit soupy when it finishes cooking, so it has to sit in the thermomix for around 1/2 hr to absorb the extra water and finish cooking the rice. I will add a little less water next time. I also use frozen peas instead of beans and fresh caps too. Thanks for the great recipe!

Delicious - family loved it. Slight tweaks as I was trying to emulate Elana from Masterchefs Spanish inspired rice. Added chopped hot chorizo along with spices and used smoky paprika as that's all I had. Served it was chargrilled chicken. A big hit - thank you.

Delicious, but had to cook for a few mins longer as rice wasn't cooked. Was a little gluggy, so will use less water next time. I also added prawns (and fresh red capsicum as others have mentioned) and it tasted great!!

The only changes I made were:
Did not have ground coriander - used 1 teaspoon of cajun spice mix instead.
Used fresh tomatoes instead of canned - blitzed in the thermomix for a couple of seconds before adding the rice and water.
Used peas instead of green beans.
Used fresh capsicum instead of marinated - grilled while rice was cooking until the skin went black and then peeled and sliced before serving with rice.

Thanks for the recipe: it is now my favourite! I fried fresh capsicum and used fresh tomatoes chopped to 1 cm maximum length. I cooked the rice, tomatoes together with the fried spices and garlic in the bowl and the rice mixture withe the beans turned out cooked with a consistency which would just drop of the end of a spoon.

Sarah, I had the same experience. Don't apologise. Cooking is a learning experience for many of us. I pride myself on being a good rice cooker. I cooked the rice in the bowl and not in the basket. I will be reducing the amount of water in the recipe to about 600ml the next time we cook this.It may even have to come down even further. We normally use about 1.75 cups of water to one cup of dry rice and cook the rice in our rice cooker in the microwave for 12 minutes. I think that the juice from the tomatoes that was in the recipe increased the amount of liquid to be absorbed by the rice. In the end after about another 15 minutes of cooking all of the water was absorbed. It was not as appetising as it was meant to be. Still a great taste and we will be doing it again.I would be interested in hearing how you go if you cook it again.

This was good. I didn't have chorizo so used some Danish salami instead. Rice cooked well but for me ended up being a bit gluggy. Is it supposed to be gluggy? Maybe it was because I forgot to add in the beans and then put it on for an extra 5 mins with the beans. Beans didn't really cook but perhaps we need to mix it in before continuing to cook? Anyway, it was still yum and very easy. Will definitely give this another go. Thanks for sharing.

I have cooked this for 15 minutes, then another 10, then another 15 at varoma and then another 7 at varoma with the rice in the basket... I still have crunchy rice...

whole family loved it. Super easy and quick. I didn't have marinated capsicum so I fried some up that was coated in garam masala. Also chopped up the fried caps after putting rice mix into thermoserver. My son has ASD and is really picky with food and he just adores this. Thanks so much.
