Creamy Garlic Chicken Risotto

  • Small handfull of parsley
  • 3 shallots
  • 2 cloves garlic (decent size cloves)
  • 40 g Butter
  • 350 g Aborio Rice
  • 900g g stock (I used 900g water + 3 tsp homemade chicken or Vegetable Stock Concentrate)
  • 500 g diced chicken
  • 60 g sour cream
  • salt to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add parsley and chop for 5 seconds on speed 6. Set aside.
    2. Add garlic and shallots and chop for 5 seconds on speed 5.
    3. Scrape down sides, add butter and saute for 2 minutes, 100 degrees, Counter-clockwise operation reverse speed 1.
    4. Insert butterfly. Add rice and 50g of the stock and saute for 2 minutes, 100 degrees, Counter-clockwise operation reverse speed 1.
    5. Add stock and chicken, cook for 18 minutes, 100 degrees, Counter-clockwise operation reverse speed stir Gentle stir setting.
    6. Add sour cream (in small blobs), parsley, salt and mix on Counter-clockwise operation reverse speed 2-3 for 5 seconds.
    7. Place in Thermoserver and let stand for approx 10 minutes.

    Sooo good! Only changes were i added a whole onion instead of shallots, an extra clove of garlic, a red de-seeded chilli, and dried parsley instead of fresh. It was amazing and my kids smashed it!

    Just made this recipe and it is amazing!

    Made a few adjustments to make it a creamy lemon dish:
    - added 3 small sprigs of fresh thyme with the parsley and sauteed both with the garlic and butter instead of removing parsley
    - when rice initially added, I sauteed with 20g lemon juice (1/2 fresh lemon) and 30g white wine vinegar
    - added another 20g lemon juice (second half of lemon) with remaining stock
    - added 1/2 cup peas with 5 mins left of cooking time
    - added 10g parmesan cheese with sour cream

    Using the juice of 1 whole lemon does make it very lemony (which I love!) so might be best to just use half a lemon to start and add more depending on your taste.
    Will definitely be making this again! 👌

    Excellent risotto recipe. Like others, I substituted some of the stock for wine, and added bacon and onion instead of shallots. At the end I added peas and spinach, and some parmesan on top. It served 8 people for dinner (I did increase the quantity a bit, to 400g rice and 800g chicken, but still 900g liquid), with a salad and bread.

    One of my fave risotto recipes 😍 I always add some bacon and mushrooms and cut back the chicken a little bit or I find I almost overflow the machine because I’ve added extras 😅 I also swap out some of the stock for some wine 👌🏻 Serve with some extra sour cream and Parmesan and it’s delish 🤤🤤

    So delicious!! I added three rashers of short cut bacon diced and one 1 extra garlic clove. I also added in 60g of extra extra sharp/strong Parmesan cheese (which I grated in the tmx before I began) and added this in when I added the sour cream. In addition to this I added a large handful of spinach. There is a fair bit of Liquid left but it will 100% finish the cooking process in the thermoserver, if you don’t have one ($5 or $10 from Kmart is the one I use) then I don’t think it will work as intended and the recipe won’t be very nice.

    This is the best ever risotto recipe, quick, easy and flavoursome. I never use a different one! One of my all time favourite thermie recipes...My family loves it and have also had plenty of compliments from in-laws, friends etc.
    However, I always use this recipe as a base and add to it. My go-to is to roast diced pumpkin and pine nuts in the oven, and add with 2 mins or so left of cooking time, as well as some parmesan. I then top with goats cheese or feta and some fresh rocket/baby spinach leaves.
    It works best/best flavour when you use sour cream, however have left the sour cream out and used oil instead of butter before to make it dairy free and still been awesome. Have also substituted for regular pouring cream or Greek yoghurt with good results.
    I don't add the total amount of the stock - my preference for risotto texture - I add between 600 and 700 mls generally.
    I have also subsituted the 50mls of stock to saute the rice before for white wine and this is delish.

    Fantastic recipe, one of my absolute staples I make all the time no matter if its for rushed weeknight dinner or an occasion, and the possibility for experimentation is endless. You will not regret making this!

    Simply amazing!! Quick easy and plenty for leftovers. Tastes amazing. I added mushrooms with the sour cream and repeated last reverse cycle for 2 minutes to ensure mushrooms cooked.
    ‘Next time I will also look to add Bacon at the garlic sauté stage.

    Was looking for a Thermomix chicken risotto - so thanks for this recipe.
    I sautéed a couple of chopped bacon rashers with the 3 French shallots and garlic and instead of the 50mLs/gm stock, I used white wine. Used chopped raw chicken breast fillets as well.

    This is a very nice dish. I seasoned the chicken prior to cooking, i also added vegeta and cracked pepper towards the end of the cook. I added shaved parmesan once served. My 2 year old devoured it. Thanks for the recipe.

    Made this for dinner tonight. First risotto I have made in my Thermie! I added a tin of corn and 1/2 cup of frozen peas and added 2mins to the cooking time. I also used greek yogurt instead of sourcream as I didnt have any and added a handful of grated cheese at the end. Will definitely be cooking this one again!!! Loved it. All three kids polished the plate! So a big winner in our house!

    Couldn't be bothered to use my thermoserver, so cooked it for an extra 3mins.
    I used a spanish (purple) onion and added some bacon at the same time.
    Blobbed on a dollop of cream in the dishes and sprinkled some parmesan on top.

    First risotto made in my thermomix and it worked perfectly. The only thing is that it tasted a bit too "oniony" for me. I've just discovered that the shallots I used might not have been what I was supposed to. I used the ones that look like little brown onions (I only used 2 thankfully) but I've read elsewhere that you actually meant the ones that look more like spring onions (who knew that shallot is something different depending on what state you live in!!) So I'll try it with that next time and see if that fixes the issue.

    Hmm added 1/2 cup Parmesan and handful baby spinach at the end, very white in colour and could use a flavour infusion, next time I will try extra flavours and let you know. Love the method though, only risotto that has worked for me so far in the thermi 😄
