Ingredients
- 1 bunch parsley, fresh
- 70 g parmesan
- 1 --- Large Brown Onion
- 2 cloves garlic
- 25 g olive oil
- 50 g white wine
- 350 g arborio rice
- 900 g chicken stock
- 450 g Raw Prawns, Peeled and Tailed
- 2 --- Cups baby spinach leaves
- 70 g sour cream
- 1/2 Lemon Juiced
- Salt and pepper

Recipe's preparation
Method:
Add parsley and chop for 5 seconds on speed 6. Set aside.
Add Parmesan and grate for 5 seconds on speed 7. Set aside with parsley.
Add garlic and onion and chop for 5 seconds on speed 5.
Scrape down sides, add oil and saute for 3 minutes, 100 degrees, reverse speed 1.
Insert butterfly. Add rice and wine and saute for 2 minutes, 100 degrees, reverse speed 1.
Add stock and cook for 14 minutes, 100 degrees, reverse speed 1.
Add prawns and baby spinich leaves and cook for 1 minute and 30 seconds, 100 degrees, reverse speed 1.
Add sour cream,, lemon juice, Parmesan, parsley, salt and pepper and mix on reverse speed 2-3 for 5 seconds.
Place in thermoserver and let stand for approx 10 minutes.
Enjoy!!!
Notes:
Don't add the prawns any earlier. They are easily overcooked in the thermomix. They will cook through resting in the thermoserver.

My partner and I just loved this. I added 2 Birdseye chillies as we like it hot, though it definately needed more. I also added more garlic and basil leaves as suggested which made it taste really good. The only mistake I nearly made, but caught myself just in time, was I went to add 900g of chicken stock concentrate and I thought the rice won’t cook and the dish will be way too strong 🤔 I realised the recipe said chicken stock not concentrate so I added just under 2 tablespoons of concentrate to 900 ml of water and it turned out fantastic.
Next time though I will try to halve all ingredients as it made just way too much for my partner and I. Or I’ll use this recipe when I have guests over for dinner

Great recipe - added half a fennel bulb and extra clove of garlic at the onion stage. Used some chopped asparagus instead of spinach and also some left over smoked salmon (added with the prawns), and some lemon zest with the parsley. Next time will probably reduce the rice to 300g and omit the cream.

You don't need to rest the risotto. If you serve up straight away the prawns will be cooked, they only need a couple of mintues. So from the time you add them to the thermo to the time you are ready to sit down and eat, they will be perfect!

i throw in a zucchini and some mushrooms at the onion stage to hide extra vegetables. The more zucchini added the less sour cream needed I found. Thank you very much for the wonderful addition to the "after sport" nights when dinner needs to be quick yet filling.

This was nice enough but not amazing. Maybe more garlic is needed for depth of flavour. I used chicken instead of prawns. The recipe called for a bunch of Parsley. Wasn't sure if this recipe meant an entire bunch as in what you would buy from the supermarket, which appeared to be a lot. I only put half this amount in. Clarification on this in the recipe would be helpful.

I made this for dinner last night and it was amazing. One of my kids is not a huge prawn eater but he went back for seconds. I did add extra garlic cause we love the flavour.

Great dish, a must try. After reading the reviews I reduced the rice to 300g and all worked well. Tasty, easy and worth the effort of peeling prawns (if using). Remember to take the tails off the prawns as per instructions....lesson learned . Thank you for the recipe.

Absolutely delicious. followed instructions but my prawns were semi frozen (just got them from aldi) so they came out perfectly. added basil at end as another did, yummy. next time would add a lttle more spinach and herbs.

Absolutely delicious risotto, my favourite so far and even my husband who doesn't like risotto thought it was pretty good. Could go just as well with chicken I think, might try that next time. I stirred in the raw prawns in the last step (stand for 10 mins in the TM bowl covered with a damp tea towel - I don't have a thermoserver) and they were cooked perfectly. I also used light sour cream and only 50g of Parmesan cheese to make it a bit lighter and it still tasted delicious. I'll definitely make this again, thanks for sharing this wonderful recipe.
