Eggless Penne Carbonara

  • 100 grams Parmesan cheese, rind removed - cubed (reserve 1/4 for garnish)
  • 20 grams extra virgin olive oil
  • 2 garlic cloves, peeled
  • 6 Spring onions chopped
  • 8 slices Short Cut Bacon Rashers, 1cm cubes
  • 300 grams water
  • 300 grams Cooking cream
  • 150 grams Mini Roma Tomatoes, halved
  • 1 tablespoon veggie stock paste, see veggie stock recipe
  • 250 grams dried penne pasta, Gluten free pasta can be used

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place parmesan in mixing bowl and grate 10sec/speed9. Transfer to a bowl and set aside. Clean and dry mixing bowl.

     

    2. Add spring onion and garlic in mixing bowl and chop 3sec/speed 7. Scrape down sides of bowl.

     

    3. Add oil, bacon and saute 5mins/120*C/stir on speed 1. Transfer into Thermoserver or bowl and keep warm.

     

    4. Place water, roma tomatoes, cream and vegie stock paste into mixing bowl and cook for 10mins/100*C/stir on speed 1. Cover with simmering basket to avoid splashes.

     

    5. Add dried penne pasta, bacon mix and stir well to make sure all pasta is submerged. Cook 8-10mins/100*C/stir on speed 1.Cover with simmering basket to avoid splashes.

     

    6. Add spinach and parmesan and cook for another 3mins/100*C/stiron speed 1 or untill pasta is aldente and spinach has wilted. Cover with simmering basket to avoid splashes.

     

    7. Serve immediately. Sprinkle with remaining parmesan and serve with cracked black pepper to taste.
