Failsafe Chicken & Leek Risotto

Ingredients

2 litre(s)

  • 50 grams raw cashews
  • 1 leek washed, halved & roughly chopped
  • 2 cloves garlic, peeled
  • 1 heaped tablespoon parsley leaves, fresh, handful
  • 30 grams sunflower oil
  • 350 grams Chicken Thigh or Breast Fillet, chopped 1cm x 2cm
  • 320 grams Aborio Rice
  • 1.5 heaped tablespoons failsafe veggie stock paste
  • 1 litre water

Recipe's preparation

  1. 1. Mill cashews 15 sec spd 7. Set aside

    2. Chop leek, garlic & parsley. 2 sec, spd 7. Scrape down the sides.

    3. Add oil & saute 3.30 min varoma speed 1. Scrape sides & bottom

    4. Add Chicken & Rice, saute 4 mins varoma reverse spd 1. Scrape down sides and bottom well.

    5. Add stock. cashews & water to 2 litre mark (approx l litre). Cook 16 mins 100 degrees reverse spd 1.5 mc off, basket on.

    6. Put in ThermoServer to absorb liquid for 5 mins.
