- 1 kg purple potatoes, peeled & cubed (or old floury potatoes)
- 600 g water
- 400 - 450g plain flour
- Pinch salt
- 2 tbsp Butter
- 1 egg

Recipe's preparation
Place potatoes into Varoma dish.
Place water into mixing bowl and cook 25 - 30 min/Varoma temp/speed 1.
Remove Varoma and set aside.
Allow potatoes to cool (approx. 15 -20 min).
Discard water, rinse and dry bowl.
Place cooled potatoes into mixing bowl and mash 10 sec/speed 4.
Do not over process or puree!
Add 300g of flour, salt, butter and egg (if using).
Set dial to "Closed lid" (closed lid position) and knead 30 - 40 sec/"Dough mode" Interval setting.
Place remaining flour, along with dough, onto floured surface or ThermoMat.
Work remaining flour into the dough until you achieve texture that is not overly sticky.
Roll dough into a finger width 'sausage' shape and cut into approx. 2cm long pieces.
Shape the gnocchi with a fork, grater or wooden gnocchi board.
Cook immediately. Place into pot of boiling water and cook until gnocchi has risen to the surface.
Remove and drain with a slotted spoon.
Serve with your favourite sauce.

Tip
To freeze gnocchi, make sure they are separated and place on a floured board in the freezer for 3 - 4 hours. Remove once frozen and place into plastic bag. They will remain separated and are ready for a quick homemade meal any time you need it!

I've made this twice now and it's so easy and delicious. I've tried making gnocchi before my thermi and it was a disaster but this is awesome. It is quickly becoming a family staple. My 4yo and 2yo love it too!

Inregards to the mashing and the butterfly whisk. No you don't need to use the butterfly whisk, just follow the recipe as is.
And the best type of potatoes to use are starchy potatoes or old potatoes.

Although these tasted good ,
Although these tasted good , as I was making them I thought they would be a disaster. There were bits of potato in the mix. I had to add a lot of flour. I used Coles Baby Royal Blue potatoes. Are you able to tell me if these are the blue potatoes in the recipe? I want to try this recipe again as I have had a lot of success with ricotta gnocchi and would like to master these too.

This is a family staple now. I'll periodically have a gnocchi day and do a few batches in a row, the frezse uncooked to have a quick cook dinner ready to go (just add sauce once cooked)

I found a similar recipe with speed 4 for cooking for the potatoes. I did this, and checked it after 15 minutes as I was a little concerned. Sure enough, I had potato water. I should have checked earlier, and I should have used this recipe!! Now, to think about what I can do with potato water.

Great to prepare and freeze for a quick meal on a busy night. Lovely light fluffy gnocchi.i always end up making a double lot, one lot to eat straight away the next lots to freeze. Thanks for the recipe.

Love Gnocchi! We normally add half a bag of baby spinach and handful of basil at the same time as adding the flour, turns out amazing with the pasta sauce in EDC! Definately a favourite in our house!
