Nana T's pasta & meatballs (made a little more healthily)

Ingredients

4 portion(s)

Meatballs

  • 2-3 slices Bread (of your choice)
  • 1 egg
  • 1 tbsp Mixed Herbs (or a punch of fresh if you prefer)
  • 250 grams Pork Mince (or mince your own)
  • 250 grams Beef Mince (or mince your own)

Pasta Sauce

  • 1 onion, roughly chopped
  • 2 cloves garlic, peeled
  • 2 carrots, roughly chopped
  • 1 zucchini, roughly chopped
  • 800 grams Roma tomatoes, peeled & roughly diced
  • 75 grams oil
  • 100 grams red wine
  • 300 grams water
  • 75 grams tomato paste
  • 1 tbsp raw sugar
  • 1 pinch black pepper
  • 1 pinch salt
  • 2 tbsp vege stock
  • 1 tbsp Sweet chilli sauce

Extras

  • Pasta, to serve
  • Parmesan, to serve

Recipe's preparation

    Meatballs
  1. 1. Blitz bread into crumbs & herbs if using fresh.2. In a bowl combine bread, egg, herbs & minces.3. Layer steaming trays with a wet piece of baking paper on each steaming tray.4. Using a teaspoon as a measure, roll out heaped teaspoon sized portions into balls & arrange onto trays and put aside.

  2. Pasta Sauce
  3. 1. Put onion, garlic, carrots & zucchini into bowl & blitz on speed 8 for 20-30 seconds until polverised. 2. Scrape down sides then add oil & cook on varoma for 5 minutes reverse speed with MC off.3. Add all other pasta sauce ingredients into the bowl & fit the varoma with the layers of meatballs inside & put on the varoma lid. Cook on varoma for 40 minutes reverse speed.

  4. Prepare pasta while the sauce is cooking either using the stove top or in the thermoserver.

Tip

Depending on how much sauce you like the sauce recipe may make too much for you.We solve this by using half one night then freezing the rest then the next time making the meatballs and cooking with 1.5 litres of water in the bowl, on varoma reverse for 40 mins.

    Made this last night, and enjoyed it very much. I had my own pasta sauce (left over from another recipe so i used that) but the meatballs were very nice and stuck together well, i would add for next time though some salt & pepper tmrc_emoticons.)
