Ingredients

  • 2 cloves garlic
  • 1 red onion
  • 2 Red Chilli's
  • 30 grams extra virgin olive oil
  • 400 grams Aborio Rice
  • 4 tablespoon TM vegetable stock
  • 100 grams white wine, to taste
  • 1.1 litre water
  • 400 grams Chicken thigh fillets, Cubed
  • 300 grams pumpkin, Cubed
  • 100 grams feta, Cubed
  • 100 grams Spinach Leaves
  • salt & pepper, to taste

Recipe's preparation

  1. Place cubed pumpkin brushed with Extra Virgin Olive Oil , salt and pepper on  a tray with baking paper in the over on 250 degrees for 10 mins add cubed feta and bake for another 5 minutes.


    Place Garlic, Onion & Chilli's into bowl and chop 3 seconds / speed 7.


    Add Extra Virgin Olive Oil and Saute 3 minutes / varoma / speed 1.


    Add the Butterfly.


    Add Rice, Vegetable Stock and White Wine for 3 minutes / Varoma /counter-clockwise operation / speed 1.


    Add the diced Chicken to the Varoma to steam while rice is cooking.


    Add Water for 17 minutes /100 / counter-clockwise operation/ speed 1.


    Stir through Roasted Pumpkin, Chicken, Feta & Spinach leaves.


    Let Risotto stand for 5 minutes before serving.

    If you choose to fry the chicken on the stove rather than steam it in the Varoma, make sure you leave the cup off the lid so steam can escape while the rice cooks - otherwise you end up with a gloopy, gluey mess instead of risotto (which is what I did!!)

    The reason the chicken isn't cooking is because it should say Varoma in the recipe. The recipe needs to be edited in a couple of places.

    Love this dish, I cooked the chicken in the Veroma tray not the veroma bowl on the veroma setting & it turned out perfect after an extra 5 mins on top of the 17 mins, will probably start cooking the chicken from the Saute step next time tmrc_emoticons.8)

    chicken didnt cook, other risottos i have made, i add the chicken into the recipe. However, i did on the stove top tonight and added some extra salt, pepper and garlic salt just to give it an extra hit. It did the trick.

    Lovely flavours but like the others my chicken was still raw after 17 mins, even with it being diced in tiny cubes. Will make this again using varoma temp and reverse speed. Huge meal with lots of leftovers too tmrc_emoticons.)

    I have just made this and decided after reading your comments about the chicken not cooking to set it at 17 minutes/varoma/reverse/speed 1 and it worked perfectly!

    Delicious. Only prob was feta melted in the oven. Would add later in the recipe instead tmrc_emoticons.)
