Spaghetti with Creamy Pesto & Sun-dried Tomatoes

  • 400 g spaghetti
  • Basil & Spinach Pesto, (as per EDC recipe p. 52)
  • 100 g sun-dried tomatoes
  • 1 brown onion, halved
  • 40 g olive oil
  • 200 g mushrooms, sliced
  • 200 g Coppa, diced
  • 300 g thickened cream

Recipe's preparation

    Spaghetti with Creamy Pesto & Sun-dried Tomatoes
  1. Make dip according to instructions in EDC p. 52 –set aside in Thermoserver.

    Add sun-dried tomatoes to TM bowl and chop for 2 seconds on speed 5.  Set aside with dip.

     

    2,  Cook spaghetti according to instructions in EDC p. 16, rinse using Varoma then set aside to drain while you start making sauce.

     

    3.  Add onion and chop for 2 seconds on speed 6.  Add ½ oil and coppa then sauté for 2 minutes at 100oon reverse speed soft.  Add mushrooms and sauté for an additional 3 minutes at 100oon reverse speed soft.  Pour in dip, sun-dried tomatoes and cream then cook for 10 minutes at 100oon reverse speed soft

     

    4.  Place spaghetti in Thermoserver with remaining oil (to stop it from sticking) then stir through hot pasta sauce.  Serve with shaved parmesan if desired.

No need to rinse bowl in between each step – save yourself the time!!

 

Coppa is an Italian cured meat you can purchase at most supermarket delis. Otherwise use bacon, 6-8 thinly sliced pieces of prosciutto or shredded cooked chicken.

    My recipe, although the new TM5 Basic Cookbook (equivalent to EDC), says 80grams leaves, 80 grams Parmesan, 30gr pine nuts, 1 garlic clove, 150grams extra virgin oil

    Hi, just wondering about the pesto recipe on pg 52 of EDC - is it really meant to be 250g of basil leaves as I have just filled up my TM bowl with a very large bunch of basil and it only registered 10g on the scale?!? Regards, Sonya
